Chicken Noodle Soup

Ingredients

  • Boneless chicken 24oz
  • Carrots 2 cups, chopped
  • Celery 1.5 cup, chopped
  • Onion 1 cup, cut into diced shape
  • Chicken broth 6cups
  • Water 3/4 cup
  • Thyme 1/2tsp
  • Oregano 1/2tsp
  • Black pepper 1/4 tsp, according to taste
  • Salt 1/4tsp, or according to taste
  • Bay leaves 2
  • Pasta 2 cups
  • Butter 1tsp
  • Fresh parsley chopped

Instructions

We can prepare Weight Watchers chicken noodle soup in two methods.

Slow Cooker

  1. Add butter to the pan, and add celery, onions, and carrots.
  2. Cook all ingredients for 3 minutes.
  3. Fill the slow cooker pot with this mixture.
  4. Next, add chicken, bay leaf, Chicken broth, oregano, salt, and black pepper.
  5. Mix all ingredients, and cook it over a slow flame for 2-3 hours.
  6. After 2-3 hours, discard the bay leaves.
  7. Also, remove the chicken from the cooker, and shred it. Set aside the shredded chicken.
  8. After that, add the noodles to the slow cooker pot, and simmer for 15-20 minutes or until the noodles are
  9. tender.
  10. After cooking, add shredded chicken, and turn off the stove.
  11. The chicken noodle soup is ready to serve.

Instant Pot

  1. In a pot add butter, and add onion, celery, and carrots.
  2. Sautee all ingredients for 3 minutes.
  3. Next, add chicken, bay leaf, Chicken broth, oregano, salt, and black pepper.
  4. Cover the pot, and lock the pot.
  5. Cook it for 10 minutes. After that, let off the pressure on the pot.
  6. Remove the bay leaves, and discard them.
  7. Also, remove the chicken, and shred it. Set aside the shredded chicken.
  8. Now, add noodles and cook them as directed on the packet.
  9. After cooking, add shredded chicken, and turn off the stove.
  10. The chicken noodle soup is ready to serve.

Tips

To make the soup creamier, add fat-free parmesan or cheddar cheese.
Add canned corn, beans, and peas. It will not affect the Weight Watchers point.
For the topping of the soup, add chopped scallions, parsley, or red onion.
Don’t overcook the noodles.
Adjust seasonings according to your taste, it will enhance the flavour, and taste without affecting the Weight Watchers point.
You can add herbs, and thymes instead of salt.

Choose low-sodium broth to reduce the salt content.

Storage Information

Store the chicken noodles soup for 2-3 days in freezer. We will only store soup. Before serving, we will cook noodles.
