This Keto Air fryer Meatloaf is delicious. Cooking in the air fryer reduces the amount of cooking time and it only 40 minutes in total to make this meatloaf. They are perfectly juicy from the interior portion and they have a nice crust from outside. I use pork rind crumbs instead of traditional breadcrumbs and almond milk to make this recipe keto-friendly and low in carbs content. This Keto Air fryer Meatloaf is also gluten-free, grain-free, & dairy-free too. This meatloaf only contains 2g fiber and 6g carbs and it is also protein rich & contains 28g of proteins/serving. This is a great dish to make before time and keep this meatloaf in the refrigerator or the freezer and take it out when there is a requirement.

INGREDIENTS:

  • 1 pound minced beef
  • ½ cup pork rind crumbs
  • ¼ cup almond milk
  • 1 large egg
  • ¼ cup small onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup keto ketchup
  • 1 tablespoon swerve brown
  • 1 tablespoon tamari

INSTRUCTION:

  1. Take a large bowl and add the pork rind crumbs, ground beef, pepper powder, garlic, salt, chopped onions, and oregano.
  2. Mix them with the spoon till they get fully combine.
  3. Now we can shape the meat mixture in a loaf shape that should fir in the basket properly.
  4. If the basket is small than make the two loaves.
  5. We take a small bowl and add the keto-friendly ketchup, swerve brown & tamari, and mix them properly.
  6. We can heat the air-fryer at 360 degrees F for like three to five minutes.
  7. Put the meatloaf in the basket and air fry the meatloaf for 20 to 25 minutes at 360 degrees F or till it the internal temperature of meatloaf reaches to 160 degrees F.
  8. After 12 to 15 minutes we can apply the homemade glaze over the meatloaf.
  9. Then we again apply the glaze with the brush 5 minutes before and air fry them till it gets set.
  10. When the meatloaf gets done; place the meatloaf on the plate for 5 minutes then slice the meatloaf with the knife.

TIPS:

  • You could utilize the meat thermometer to ensure that the meatloaf gets perfectly cooked so when the interior temperature of meatloaf reaches to 165 degrees f, then the meatloaf is done.
  • We can also adjust the level of moisture according to the requirement like if it is wet then we can include the additional pork rind crumbs, or if it seems dry then we can add the splash of almond milk to adjust its consistency.
  • You could also adjust the seasoning according to our preference like oregano, or Italian seasoning and add the cayenne pepper or red chili flakes to make it spicier.

  • Place the remaining meatloaf in the sealed container and store the meatloaf for 3 to 4 days.

FREEZER:

  • We can cover the slices of meatloaf with the plastic wrap then put them in the seal bag or in the box and store the meatloaf for around three months.

REHEAT:

  • We can thaw the meatloaf in the fridge for 12 hours or for night and then warm up in the air fryer or in the oven at 350 degrees F for 10 to 15 minutes.
