Keto Blackberry Ice-Cream

Keto Blackberry Ice-Cream gives the eye-catching purple color provided naturally from the blackberries. People who love Blackberries can enjoy this low-carb version of Keto Ice cream because it has only 3.7 grams of net Carbs per serving with a high amount of fat. This recipe gives us both versions with and without an ice cream maker. The only difference is that if you use an ice cream maker it will take about 30 minutes to finish the process meanwhile if you make it churn-free, It will take about three hours to set.

EQUIPMENT:

  • An Ice cream maker
  • Mixing Bowl 1
  • 1 Blender

INGREDIENTS:

  • 28 grams of divided blackberries, Fresh or frozen
  • Thick Whipping Cream 75 ml or 2.5 cups.
  • A single cup of water.
  • The sugar substitute is 3/4 cup, Granulated.
  • One-fourth cup of lemon juice.
  • Salt 1/8 of a teaspoon.

INSTRUCTIONS:

  1. Take a small bowl and add lemon juice and the sugar substitute. Mix them well.
  2. Now take a blender and add Whipping Cream, Salt, Water, and a Mixture of Sugar and Lemon juice.
  3. Blend well for 20-30 seconds.
  4. Now add Half the amount of Blackberries in the blender.
  5. Once more, process for 30 seconds to get a velvety, creamy combination.
  6. Take the remaining Blackberries and add them to the Ice cream mixture.
  7. Mix it Nicely to combine well but don’t over-mix to keep the blackberries as whole.
ICE CREAM MAKER:
  1. Transfer this mixture to the ice cream maker machine and process until you get the desired consistency of ice cream.
  2. It will require between twenty and thirty minutes.
  3. After that, you can freeze it in a covered container to make it firm.
  4. If it is too hard to eat at the time of serving then Leave it on the kitchen counter to make it easy to scoop out.
WITHOUT ICE CREAM MAKER:
  1. If you don’t want to use an ice cream maker then freeze the above-prepared ice cream mixture in a Metal pan or two depending on the quantity you have.
  2. After One hour, take it out, and Using a spoon, mix it up once more.
  3. Put it back into the freezer.
  4. Repeat the same process two or three times again with an hour interval.
  5. It’s time to indulge in your no-churn ice cream.

TIPS:

If you want to keep your ice cream soft even after frozen for the whole night you can use a small amount of Vodka or MCT oil.

STORAGE:

The ice cream cannot be preserved in the fridge.
Store the Ice cream in a reusable plastic Box and cover it with a sheet of Wax or Parchment Paper.
Store it for approximately three consecutive months in the freezer.

You can use the following sugar substitute according to the given information:

  1. White sugar is 300 times less sugary than stevia. It comes in both liquid and strong powder forms.
  2. Monk fruit is generally found in China and Thailand and is 300 times more sweet than table sugar.
  3. This sweetener is found in the market as a pure liquid or in a dried form.
  4. Erythritol is 70% sweet just like regular table sugar.
  5. Also, allulose has 70% more sweetness than white sugar. It is found in wheat, raisins, or figs but the best part is that it is not absorbed by our body and almost all of it passes out through the system without any contribution of adding carbs.
  6. Regular sugar is sweet just like Xylitol. It naturally occurs in some plants and has less than 40% less calories as compared to white Sugar.

Does this ice cream need to be made only in an ice cream maker?

You can easily make this ice cream without an ice cream maker as well but it takes 3-4 hours to get ready while the ice cream maker makes it in just 30 minutes.

Do we have to use fresh blackberries or frozen ones?

I prefer to use fresh Blackberries but if you can’t find Fresh ones, you can use frozen Blackberries as well.
