Ingredients:

  • 1 egg
  • Powdered stevia 1 tbsp.
  • Cocoa powder 1 tbsp.

  • Pecans 100g
  • Whipped cream 300ml
  • Vanilla extract 1 tsp.
  • Expresso Coffee 80 ml
  • Powdered stevia 2 tbsp.
  • Cream cheese 250g
  • Gelatin powder 2 1/2 tsp.
  • Boiling water 2 tbsp.
  • Coffee beans for serving

Instructions:

  1. Heat your oven to 200F.
  2. Grab a baking tray in a round shape and then place a piece of paper in it.
  3. To make the base, take a blender and then add the pecans it, and then blend them to make a fine powder.
  4. Now add the almond meal, stevia, and cocoa powder and combine well.
  5. Then, add eggs and butter and mix them.
  6. Put the ready batter in a pan.
  7. Bake it for almost 10 minutes until it gives you a golden color.
  8. Grab a large bowl with some boiling water and then mix the gelatin in it.
  9. Beat the cream cheese, coffee, and then stevia with the beater and then the vanilla and beat them until it become smooth.
  10. Add the gelatin mixture and then beat again.
  11. Add the whipped cream in it and then layer it over the chilled base.
  12. Cover it properly and then chill for 2 hours.
  13. Add the coffee beans and sprinkle some cocoa powder over it.
  14. Slice the cake and now it is ready to serve.
