Recipe: Keto Cheddar Flatbread

Ingredients:

  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsalted butter, melted

Instructions:

Preparing the Dough:
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, melt the shredded cheddar cheese in 30-second intervals, stirring between each interval until the cheese is completely melted and smooth.
  3. In a separate bowl, combine the almond flour, coconut flour, baking powder, garlic powder, onion powder, and salt. Mix well.
  4. In another bowl, beat the eggs and add them to the dry ingredients. Mix until a dough forms.
  5. Pour the melted butter into the dough and mix until well combined.
Shaping and Baking:
  1. Place the dough on the prepared baking sheet. Cover it with another sheet of parchment paper. Use a rolling pin to roll the dough out into a rectangle, about 1/4 inch thick.
  2. Remove the top parchment paper, and use a knife to score the dough into desired sizes (squares or rectangles).
  3. Bake in the preheated oven for 15-20 minutes or until the flatbread is golden brown on the edges.
Cooling and Serving:
  1. Remove from the oven and let it cool for a few minutes. Then, carefully separate the pieces along the scored lines.
  2. Serve the Keto Cheddar Flatbread warm. Enjoy it as a snack, with dips, or as a base for keto-friendly toppings like cheese, vegetables, or cured meats.
