INGREDIENTS:

BASE OF SALAD:

  • Chopped celery, 1/2 cup
  • 2 cups of grated cabbage, green
  • Pumpkin/sunflower seeds(roasted/raw), 0.25 cup
  • 1 cup of grated cabbage, red
  • Chopped parsley, a quarter cup
  • 1 cup of kale
  • 0.5 cup of thinly sliced radishes
  • Florets of broccoli, 1 cup
  • 1 cucumber, normal in size

FOR DRESSING:

  • 0.25 teaspoon of salt
  • Oil of olives(extra-virgin), 1/4th cup
  • 2 tbsp. of vinegar, apple cider
  • Half teaspoon of keto sweetener, monkfruit/erythritol
  • 1 tbsp of lemon juice, fresh
  • One-fourth tsp of freshly powdered pepper,black
  • 1 teaspoon of mustard, Dijon
  • A minced clove of garlic

INGREDIENT NOTES:

CUCUMBER:

  • It adds crunch along with a lot of water to our detox salad. You may replace it with zucchini.

CABBAGE(GREEN/RED):

  • If you don’t have red or green cabbage, then swap it with Napa cabbage, which is low in carbs and perfect for weight loss.

VINEGAR(APPLE CIDER):

  • This is the essential component of our detox salad. Juice of lemon/white wine vinegar will also do a similar work.

KALE:

  • If you get too rough & tough leaves of kale, then rub oil on them to make them soft. Collard greens & baby spinach will give you similar nutrients.

SWEETENER:

  • This is not a compulsory item. It improves the dressing’s flavor in general. Use any keto sweetener like monkfruit, erythritol, etc., according to their sweetening ability.

RADISHES:

  • They will add the crunch to your salad with nutrients and low carbs. Jicama will also work similarly if you don’t like radishes.

BROCCOLI:

  • We require finely chopped broccoli here. Cauliflower will also be the best choice if broccoli is not available.

OIL OF OLIVES:

  • The oil of olives is good for cardiac health, so including it in dressing will be beneficial for you. Oil of avocado will also work in the same way.

PUMPKIN/SUNFLOWER SEEDS:

  • These seeds are the powerhouse that is full of nutrients like fiber, fats(healthy), etc. You may use hemp seeds, chopped almonds/walnuts, etc. can also use as a replacement.

INSTRUCTIONS:

  1. Wash all the veggies under water(running).
  2. Dry them using the salad spinner or leave them for some time in the colander to remove water.
  3. Then, properly dry them with a kitchen towel.
  4. Use the grater to grate both red & green cabbage.
  5. Nicely chop the cucumber, kale, radishes, celery, broccoli, & parsley.
  6. Include all the chopped veggies & seeds in a little bowl.
  7. Toss to mix them all around.
  8. Now, include the Dijon Mustard, oil of olives, keto sweetener(optional), apple cider vinegar, powdered black pepper, juice of lemon, & salt in a bowl or glass jar with a lid.
  9. Shake well if using the jar or whisk if using a bowl, till you have an emulsified dressing.
  10. Transfer the dressing to the mixed salad & mix well so that the whole salad is coated evenly with the dressing.
  11. Your Keto Crunchy Detox Salad is ready to serve after around ten minutes.

TIPS:

  • Avoid the use of frozen chopped veggies, as they won’t give you the proper crunch. Always chop the veggies fresh to have more crunch.
  • Oiling the leaves of kale will make them soft, which will make them more tasty to eat.
  • After assembling the salad, rest it in the refrigerator for no shorter than 0.5 hrs. This resting will mix the flavors properly.

STORAGE DETAILS:

REFRIGERATOR:

  • Pack the mix of chopped veggies in a container(airtight). That container is safe to keep in the refrigerator & serve after dressing it within four days.
    If you have the dressed salad left, finish it within 36 hrs or less. Otherwise, it will start losing its nutrients & crisp.

EARLIER PREPARATION:

  • If you store the chopped mix salad & dressing separately, & assemble it at the time of serving. Your salad will look fresh & more crunchy than the previously stored dressed salad.

Can we make the salad seed-free?

  • Yes, if you want your salad to be seed-free, then skip seeds & add some chopped nuts.

Is this salad freezer-friendly?

  • No! We never advise freezing the salad. As the veggies will be very moist/soft after defrosting. They will also lose their nutrients. It is always better to consume fresh salad with crunchy veggies & nutrients.

Are fruits allowed in this salad?

  • You need to avoid the fruits with high-carb content if you are doing the strict keto diet. Otherwise, use a limited amount of low-carb fruits in the salad.
