TO MAKE THE FROSTING:

  • ¼ cup butter
  • ½ cup Erythritol powder
  • 1 tsp. vanilla extract
  • 1–2 tbsp. heavy cream

INGREDIENTS NOTES:

ALMOND FLOUR:

  • We have to use the finely blanched almond flour rather than almond meal for a soft, cake-like texture.

COCONUT FLOUR:

  • Coconut Flour adds structure and aids in moisture absorption; do not use it in place of other flours because it is highly absorbent.

SWEETENING:

  • We have to use the Erythritol, monk fruit blend, or Allulose, which are keto-friendly granulated sweeteners. We can adjust the amount of sweetener according to the sweetness and taste.

BANANA EXTRACT:

  • We can use the banana extract without actual bananas, because the banana extract gives Hummingbird its distinctive flavor without adding carbohydrates.

PINEAPPLE EXTRACT:

  • We can use the pineapple essence in place of the actual pineapple to keep the carbs low and keto-friendly.

EGGS:

  • Eggs offer moisture and structure, and they also help in binding the components. And we can use the big eggs because they are ideal.

BUTTER:

  • We can add butter to this cake to add richness to the cake; we can also use coconut oil for the dairy-free option.

PECANS OR WALNUTS:

  • We can add the chopped Pecans or Walnuts; pecans are a staple and add crunch and traditional Southern flavor.

SHREDDED COCONUT:

  • We can add the unsweetened Shredded Coconut because it offers texture and a hint of sweetness without adding additional sugar.

CREAM CHEESE:

  • We have to use the full-fat cream cheese, which provides a rich, tart foundation for frosting.

HEAVY CREAM:

  • Heavy Cream keeps the frosting creamy and keto-friendly while thinning it.
