DRESSING:

  • Sesame oil (toasted), 1 tsp
  • One-fourth cup of mayonnaise
  • A tsp of sriracha or to taste.
  • Juice of lemon, one teaspoon

  • Carrots (julienne cut), 1.5 cups
  • 8 oz of Lump crab meat
  • Half cup of cumber (cut in julienne slices)
  • Kelp noodles, 12 ounces

INGREDIENT NOTES:

CARROTS & CUCUMBERS:
After cleaning the cucumbers & carrots, cut them into julienne slices.

SESAME OIL (TOASTED):
To have a classical Japanese touch to our salad, use the toasted sesame oil.

MEAT OF CRAB:
You have the choice to use either imitation crab meat/real crab meat. We recommend that real crab would be quite healthy & nutritious. You may also swap the real crab meat with its imitation. Fish puree & starch will mix to have the imitation crab sticks, which we can name as kanikama/surimi.

LEMON JUICE:
Use fresh juice of lemon to have the best taste. You may also use simple vinegar of rice to swap the juice of lemon if the fresh ones are not available to you

KELP NOODLES:
The recipe is Japanese; that’s why it pairs well with the kelp noodles as they are Japanese too. In normal circumstances, kani salad doesn’t contain the noodles.

MAYONNAISE:
Use the commercial keto mayonnaise. We recommend you make the homemade keto mayonnaise for a healthier option. To make the recipe fully Japanese, then you may use the Japanese mayo (kewpie).

SRIRACHA:
It makes our salad spicy. If you need to keep the spices low, then use a small amount of sriracha only to have its flavor.

INSTRUCTIONS:

  1. Put a clean vessel in your working place.
  2. Include all the items in that vessel to make the dressing.
  3. Combine the dressing well & cover it with the wrap (cling).
  4. Chill it for 2/3 hours using the fridge to help develop the flavors.
  5. Wash & dry the cucumber & carrots.
  6. Use a sharp & clean knife to cut them into julienne slices.
  7. Pick another big vessel.
  8. Include noodles (kelp), carrots, cucumbers, & meat of real/imitation crab.
  9. Sprinkle with powdered peppercorns & salt to taste.
  10. Combine them all the way through.
  11. Transfer the prepared & refrigerated dressing to the veggies.
  12. Stir it thoroughly.
  13. Using a salad bowl, serve.
  14. Top with seeds of sesame/fish roe.
  15. Your favorite kani salad is ready.

TIPS:

We recommend you shred the meat of the crab using your hands. Your hands will be a little messy, but the work will be super easy & perfect.
You have the easy option of making the salad before time. It will develop amazing flavors while refrigerating.
The julienne cut of the carrots & cucumbers helps them to mix well along with the crab meat.
The items used in the recipe are quite sensitive. Mix them with gentle hands to have a pretty look.

STORAGE INFORMATION:

FREEZING:
We don’t recommend freezing the salad here. As the components are not suitable for freezing.

FRIDGE:
You may use the fridge to store both of them in separate vessels. If you keep the dressing & veggies separate, you will have the fresh salad anytime for 2/3 days. You only have to mix the items with the dressing to serve & enjoy!

Can I replace the noodles if the pure Japanese version is not available?
Sure, you may use any version that is available to you from the below list:
Spaghetti squash
Cucumber noodles
Noodles of zucchini
Shirataki noodles

Will the salad be perfect when made before time?
The salad will be best if you store it for some hours in the fridge. However, if you wait a long period, the veggies may become flaccid.
