INGREDIENTS

  • One pound of chicken breast, skinless & boneless, sliced into 1-inch pieces
  • 1 lemon’s juice (about three tablespoons)
  • One tablespoon of olive oil
  • Three minced garlic cloves
  • One teaspoon of oregano, dried
  • 1/4 teaspoon black pepper & Half teaspoon salt
  • 1/2 a teaspoon of paprika
  • 1/4 teaspoon black pepper & Half teaspoon salt
  • Fresh parsley, chopped (optional)

INGREDIENT NOTES:

Chicken:

  • Boneless, skinless chicken breast is to be used as the low point. Cubed in the same sizes to cook quickly.

Lemon juice:

  • Fresh lemon juice contributes to the light zestiness and makes the bites soft.

Olive oil:

  • Add only a tablespoon to make it light. It is also possible to apply a calorie-controlling olive oil spray.

Garlic:

  • The deep flavor is given by fresh minced garlic. Garlic Power can be used too in case of necessity.

Spices:

  • Bold Mediterranean flavor comes in the form of oregano, paprika, salt & pepper. They are adjustable according to taste.

Garnish:

  • Freshness is also given by parsley and lemon wedges that are optional.

INSTRUCTIONS:

  1. Put pieces of chicken in a bowl.
  2. Add these all items like oregano, paprika, lemon juice, pepper, olive oil, salt, and garlic.
  3. Toss thoroughly to evenly coat all of the chicken.
  4. Allow the chicken to marinate at room temperature for ten to fifteen minutes.
  5. Heat a non-stick skillet over medium heat.
  6. Arrange the chunks of chicken on a single layer.
  7. Cook till golden & cooked through, flipping halfway through, 5 to 6 minutes.
    Avoid packing the pan too full. If necessary, cook in two batches.
  8. After cooking, take off the pan and give it a rest for two to three minutes.
  9. If preferred, serve with lemon wedges & garnish with fresh parsley.

TIPS:

  • Place a marinated chicken in a bowl for as long as 30 minutes so that it can have a better flavor.
  • This should not be overcooked. Chicken is fast to dry. Take out when juices are clear.
  • Take a meat thermometer. When chicken reaches 165°F (74°C). It is cooked.
  • Serve alongside steamed vegetables, quinoa/even on sticks.
  • Add chili flakes to make it spicier.
  • Dice up any leftovers to make wraps or salads, or grain bowls.

FRIDGE:

  • Store chicken chunks for no less than four days in a container with airtight lids. Heat up again in a oven as well as a skillet.

FREEZER:
