INGREDIENTS
- One pound of chicken breast, skinless & boneless, sliced into 1-inch pieces
- 1 lemon’s juice (about three tablespoons)
- One tablespoon of olive oil
- Three minced garlic cloves
- One teaspoon of oregano, dried
- 1/4 teaspoon black pepper & Half teaspoon salt
- 1/2 a teaspoon of paprika

- Fresh parsley, chopped (optional)
INGREDIENT NOTES:
Chicken:
- Boneless, skinless chicken breast is to be used as the low point. Cubed in the same sizes to cook quickly.
Lemon juice:
- Fresh lemon juice contributes to the light zestiness and makes the bites soft.
Olive oil:
- Add only a tablespoon to make it light. It is also possible to apply a calorie-controlling olive oil spray.
Garlic:
- The deep flavor is given by fresh minced garlic. Garlic Power can be used too in case of necessity.
Spices:
- Bold Mediterranean flavor comes in the form of oregano, paprika, salt & pepper. They are adjustable according to taste.
Garnish:
- Freshness is also given by parsley and lemon wedges that are optional.
INSTRUCTIONS:
- Put pieces of chicken in a bowl.
- Add these all items like oregano, paprika, lemon juice, pepper, olive oil, salt, and garlic.
- Toss thoroughly to evenly coat all of the chicken.
- Allow the chicken to marinate at room temperature for ten to fifteen minutes.
- Heat a non-stick skillet over medium heat.
- Arrange the chunks of chicken on a single layer.
- Cook till golden & cooked through, flipping halfway through, 5 to 6 minutes.
Avoid packing the pan too full. If necessary, cook in two batches. - After cooking, take off the pan and give it a rest for two to three minutes.
- If preferred, serve with lemon wedges & garnish with fresh parsley.
TIPS:
- Place a marinated chicken in a bowl for as long as 30 minutes so that it can have a better flavor.
- This should not be overcooked. Chicken is fast to dry. Take out when juices are clear.
- Take a meat thermometer. When chicken reaches 165°F (74°C). It is cooked.
- Serve alongside steamed vegetables, quinoa/even on sticks.
- Add chili flakes to make it spicier.
- Dice up any leftovers to make wraps or salads, or grain bowls.
