INGREDIENTS

  • Four skinless & boneless chicken breasts
  • One cup of plain Greek yogurt without fat
  • Half a cup of Parmesan cheese, grated
  • One teaspoon of powdered garlic
  • A tablespoon of powdered onion
  • One teaspoon of paprika smoked
  • Half a teaspoon of salt
  • 1/2 a teaspoon of black pepper
  • One tablespoon of olive oil spray

INGREDIENT NOTES

Chicken breasts:

  • Take a lean foundation of boneless, skinless chicken breasts. If they are thick, pound a bit so that they are able to cook uniformly.

Greek yogurt:

  • Plain, fat-free Greek yogurt is used to make the coating creamier, but it does not contribute a large amount of fat. It makes the chicken moist in addition.

Parmesan cheese:

  • It adds an earthy flavor & a salty, nutty flavor. To equally mix the yogurt, use grated cheese.

Garlic powder:

  • Brings out a rich flavor to cool the yogurt. It also enhances taste without distracting the chicken.

Onion powder:

  • Improves the general flavor & can be combined with garlic.

Smoked paprika:

  • Gives a smoky taste as well as color. You can use regular paprika if you are used to a milder taste.

Salt & pepper:

  • These are simple spices to add taste. Adjust to taste as you like it.

Olive oil spray:

  • Prevents sticking of the chicken coating & finishes the chicken with a light, crisp appearance.

INSTRUCTIONS:

  1. Set the oven temperature to 375°F (190°C). Lightly mist a baking dish with a little olive oil spray.
  2. Combine Greek yogurt, Parmesan cheese, paprika, the onion & garlic powders, salt, & pepper in a bowl & whisk till smooth.
  3. The chicken breasts can be patted dry with a paper towel.
  4. Put them in the ovenproof dish.
  5. Coat each chicken breast completely by evenly spreading the yogurt mixture over them.
  6. For browning, lightly mist the tops with olive oil spray.
  7. Bake for 30 to 35 minutes, the chicken’s internal temperature should reach 165°F (74°C).
  8. Finish cooking the chicken by broiling it for the next two to three minutes for a golden brown top.
  9. Before distributing, take it out of the oven & give it five minutes to rest.

TIPS

  • To ensure that no chicken is overcooked, use a meat thermometer so that the chicken is juicy.
  • Cut large chicken breasts in half lengthwise so they cook faster.
  • Add a fresh herb such as parsley/thyme once it is baked & you are in great taste!
  • Serve with roasted vegetables, side salad/cauliflower rice to complete the plate.

DATA STORAGE

Refrigerator:

  • Keep the remains for at least three days in a sealed package. Reheat in the oven at 325°F till fully heated.

Freezer:

  • Store cooked chicken breasts for at least two months in a freezer bag/sealed storage. Chill overnight in the refrigerator before reheating.
