INGREDIENT NOTES

Shrimp:

  • Shrimp is a good source of lean protein and has a mild seafood taste. Cut into small pieces to blend throughout the dip.

Crab meat:

  • Sweet and delicate. For lump crab that hasn’t been opened, canned crab is drained, but fresh lump crab is the best.

Spinach:

  • Provides color and texture as well as nutrients. Squeeze off excess water by lightly sautéing.

Greek yogurt:

  • Plain Greek yogurt, no fat: creamy, tangy. It is a low-fat food that increases protein.

Light cream cheese:

  • It forms a creamy layer. By softening it, it is easier to mix.

Light sour cream:

  • This is a super ingredient that adds richness and does not carry too many points.

Mozzarella cheese:

  • This is melting and provides stretch. Part-skim is the lightest.

Parmesan cheese:

  • Sharp, salty. A little gives a strong flavor.

INSTRUCTIONS

  1. Turn the oven on to 375°F, or 190°C.
  2. Spray cooking spray lightly on an 8 × 8-inch baking dish.
  3. With a little spray, sauté spinach in an iron skillet over a low flame for about two minutes, such that it wilts. Empty the extra liquid.
  4. Beat the sour cream, light cream cheese, and Greek yogurt together in a big bowl until smooth.
  5. Add the paprika, red pepper flakes, garlic, onion powder, mozzarella, Parmesan, salt, and black pepper. Stir completely.
  6. Add the cooked spinach, chopped shrimp, and crab meat, and fold.
  7. Using a spatula, mix gently. Evenly distribute the components in the baking dish that has been prepared.
  8. Bake till bubbling and heated, about 20 minutes.
  9. In the final minutes, broil for one to two minutes if you want a golden top.
  10. Remove from oven to let cool slightly before serving.

TIPS

  • Use celery sticks, carrot sticks, or cucumber slices as a low-point dipper.
  • Whole-grain pita chips or light crackers are an option when you want something crunchy.
  • When frozen spinach is used, it should be thawed and all the water squeezed before adding.
  • Make the dip ahead of time and bake it before serving to facilitate meal preparation.
