INGREDIENTS:

SUGAR COOKIE BASE:

  • 1/4th cup of coconut flour
  • Essence of vanilla, one tsp.
  • 1/2 cup of erythritol
  • Flour of almond, two cups
  • 1/4th tsp. of baking powder
  • Butter/oil of coconut, half a cup
  • 1 dash of salt
  • Egg, one

LEMONADE FILLING:

  • 2 eggs
  • Coconut oil/butter, two tbsp.
  • 1/2 cup of lemon juice
  • Flour of coconut, two tbsp.
  • 1/2 cup of erythritol
  • Zest of lemon, one tbsp.

CRUMBLE TOPPING:

  • 1/2 cup of sugar cookie dough(reserved rom the base mixture)
  • Chopped pecans/shredded coconut, two tbsp.

INGREDIENT NOTES:

ERYTHRITOL:

  • We will require the granulated version of erythritol here. This will provide the crunchy sweetness as erythritol will crystallize upon cooling. It also caramelizes well as the original sugar while keeping the carbs low. You may use allulose or a blend of stevia and erythritol. Allulose will take the crumble to the softness side.

FLOUR OF ALMOND:

  • It will be used as the low-carb base for cookie dough. Use the well-ground flour of skinless almonds to have a smooth dough. Along with working as a base, it also provides a nutty flavor & buttery texture. You may use the flour of hazelnut for a strong nutty flavor. If nuts don’t suit you, try using the seed flour.

EGGS:

  • The eggs are also the key component as they bind the dough & provide it with structure. While in the lemon filling, the eggs help it to set properly. Eggs are rich in proteins & healthy fats. You may swap the eggs with flax/chia eggs or use any egg replacer powder of any keto brand.

JUICE OF LEMON:

  • It is the main component necessary for the lemonade filling. We always prefer the freshly squeezed juice of fresh lemons for a fresh and strong taste. You may use the bottled one in case the fresh lemons are not available. Lime juice would also work.

FLOUR OF COCONUT:

  • As the flour of coconut absorbs too much moisture, that’s why we use it to absorb excess moisture from the dough and to thicken the filling. It works as a low-carb thickener for the filling. You may use the oat fiber and psyllium husk(powdered) as an alternative

ZEST OF LEMON:

  • It can deepen & strengthen the lemon flavor naturally. While zesting, be careful to avoid the white part, as it induces bitterness. You may opt for the lime zest or the orange zest.

BUTTER:

  • It adds richness & moisture while making the crumbs crunchy & soft. The butter is responsible for setting the filling. You may use ghee as well, or a refined version of coconut oil to go non-dairy.

TIPS:

  • Always use the room temperature eggs for baking.
  • If you prefer a firmer texture, then eat it directly from the refrigerator; otherwise, this will also be perfectly delicious at normal temperature(of surroundings).
  • Incorporate one-fourth teaspoon of citric acid to enhance the sour flavor of lemon.

HOW TO PRESERVE(LEFTOVER):

CHILLING:

  • Save these bars(leftover) in a container with a lid(air-tight). Refrigerate & consume them within ~five days.

FREEZING:

  • Keep the slices in a container with a lid(sealed) with parchment paper in between every two slices. Freeze them for ~two months. Defrost a night before you need to serve, within the given freezing duration.

FAQs:

Does it taste like the regular bars of lemon?

  • This keto sugar cookie crumble is nuttier than the lemon bars, but tastes just as good as lemon bars do.

Will the preserved lemon juice work here?

  • You may use the preserved bottled lemon juice if you can’t find the fresh lemons. The juice of fresh lemons tastes much fresher & deeper as compared to the bottled one.

What changes must I make to stop eating dairy?

  • You only need to swap the butter with refined coconut oil & your recipe will be free from the dairy.
