INGREDIENTS

  • Two cups of riced cauliflower (boiled and pressed dry, either fresh/frozen)
  • 1/2 cup shredded low-fat cheddar cheese
  • 1/4 cup of Parmesan cheese, grated
  • One-fourth cup of green onions, cut finely
  • 1/4 teaspoon powdered garlic
  • One-fourth of a teaspoon of black pepper
  • 1/4 teaspoon of salt
  • Two big egg whites
  • Cooking spray that doesn’t stick
  • One quarter of a tablespoon of powdered onion

INGREDIENT NOTES

Cauliflower:

  • Use cauliflower rice, which has been really drained. Press some of the excess moisture out gently with a clean towel so you don’t get soggy bites & everything firms up in the oven.

Cheddar:

  • Use lower-fat sharp cheddar to keep the SmartPoints low, yet still deliver bold flavor. It’s creamy and gives richness.

Parmesan:

  • Adds a savory, nutty flavor & the edges will bake crispier for you in the oven for better texture.

Green Onions:

  • Finish with sliced green onions for that freshness and pop of color. They’re nice, but not absolutely necessary/you can replace them with chives.

Egg whites:

  • Serve as a substance that serves to hold the ingredients together without adding extra fat, which makes the dish WW-worthy and light.

Seasoning:

  • Add to taste, garlic or onion powder. Add flavor without the calories or SmartPoints with these!

DIRECTIONS

  1. First, you need to preheat the oven to 200°C (400°F).
  2. Place paper towels into a baking pan. Apply a small amount of non-stick spray.
  3. If the cauliflower rice is uncooked, cook it, then let it cool and drain the liquid.
  4. Fill a bowl with cauliflower. Add the seasonings, cheeses, & green onions.
  5. Mix well after adding the egg whites.
  6. Using a spoon, scoop the mixture into little mounds, about 1 tablespoon each.
  7. Place on the baking sheet after forming into ovals/balls.
  8. Apply spray of cooking oil to the tops sparingly.
  9. Now bake it for the all most 25 minutes.
  10. Toast till the edges are crispy and brown.
  11. Before serving, let it cool a little.

TIPS

  • See that the cauliflower is as thoroughly dry as feasible. Humidity causes the bites to be wet.
  • A mini muffin tin is used to achieve round-shaped bites.
  • Equally portion with a scooping cookie.
  • Make up twice the amount & freeze the remaining to have them as a convenient snack.

  • Refrigerate in a sealed jar for 4 days. For the good texture, warm up in the oven/air fryer.
