INGREDIENTS

  • Half a cup of applesauce without sugar
  • One-fourth cup of light brown sugar
  • 1/4 cup granulated sugar alternative (such as stevia blend or monk fruit)
  • 1 single egg
  • One teaspoon of vanilla essence
  • 3/4 cup of whole wheat flour
  • Half a teaspoon of baking soda
  • 1/2 a teaspoon of cinnamon
  • One cup of traditional rolled oats
  • 1/3 cup of shredded coconut, unsweetened
  • 1/4 teaspoon of salt
  • One-fourth cup of small chocolate chips
  • Two teaspoons of optionally chopped pecans/walnuts

INGREDIENT NOTES

Applesauce:

  • Contributes moisture & substitutes oil or butter & reduces points.

Sugar:

  • Light brown sugar & sugar substitute add sweetness without adding extra calories.

Flour:

  • To create bulk, whole grain flour is used. An alternative is all-purpose.

Oats:

  • Rolled oats should be old-fashioned. Never take quick/instant oats.

Coconut:

  • Put in unsweetened coconut in order to eliminate added sugars.

Chocolate chips:

  • Mini chips are spreader & melt well.

Nuts:

  • Crunch optional. Toast out.

DIRECTIONS

  1. Set the oven’s temperature to 350°F (175°C). Put parchment paper on a baking pan.
  2. Combine applesauce, brown sugar, egg, sweetener, & vanilla in a large basin & stir until smooth.
  3. In a another bowl, mix the salt, flour, cinnamon & baking soda.
  4. The dry elements should be add and mix into the wet mixture carefully .
  5. Fold to mix in the coconut, chocolate chips, oats, & nuts, if using.
  6. Place the dough on a baking tray after separating it into tablespoon-sized balls.
  7. Using the tip of your fingers/the back of a spoon, & make softly smooth.
  8. Bake for ten to twelve minutes, till the outer edges are browned.
  9. Cool it on the baking sheet for five minutes, then move to a cooling rack to cool completely.

TIPS

  • Place chilled dough in the refrigerator for 10-15 minutes in case it is too sticky.
  • Roast the coconut and the nuts to give it added flavour.
  • Underbaking is good; cookies will get crisper as they cool.
  • Even size using a cookie scoop.
  • Freezing leftover dough balls is convenient so that you can bake them later.

STORAGE INFORMATION

Fridge:

  • For the following week, put baked cookies in the chiller in a tightly sealed container.
