Ingredients:

  • Water 1 cup
  • Grated Mexican Cheese 1/2 Cup
  • Chopped Tomatoes 1 cup
  • Black Pepper, a pinch
  • Salt, add according to taste

Ingredient Notes:

Chicken:

  • I use fat-free breast chicken. Instead of this, you can use chicken thighs, lean-ground chicken, or rotisserie chicken. Even turkey meat will also work well.

Black Beans:

  • I make this meal with black beans. Canned red beans or pinto beans also work well in this recipe.

Mexican Cheese:

  • Use any low-fat cheese like mozzarella or cheddar to make this dish more creamy.

Water:

  • You can add chicken broth to make this dish more flavorful instead of water.

Salsa:

  • We used canned salsa.

Instructions:

Instant Pot:

  1. First, cut off the extra fat from the chicken with a knife.
  2. Rinse the chicken with normal water.
  3. Next, add fat-free chicken and water to the instant pot.
  4. Put the lid on and secure it. Simmer it for fourteen to seventeen minutes.
  5. After that, let the pot rest for five minutes, then quickly release any remaining steam.
  6. Now, tear the cooked chicken with a fork.
  7. Next, wash the canned black beans and pat dry with kitchen paper.
  8. Add shredded chicken, drained black beans, black pepper, salsa, frozen corn, salt, and tomatoes to the pot.
  9. Mix all items with a spoon and simmer it for six to nine minutes on high flame.
  10. After 8 minutes, uncover the pot and discharge steam.
  11. Combine the items until they are fully blended.
  12. Garnish over shredded cheese and chopped tomatoes.
  13. The tasty Weight Watchers Fiesta Chicken is ready.
  14. Serve in a serving bowl. Enjoy.

Slow Cooker:

  1. Add fat-free chicken breast to a slow cooker.
  2. Next, pour water, drained black beans, black pepper, salsa, tomatoes, salt, and frozen corn in a slow cooker.
  3. Cover the slow cooker with the lid.
  4. Now, on a high flame simmer it for two to three hours, or on a low flame for six to nine hours
  5. After that, open the lid. Shift the tender chicken to a small dish.
  6. Break the chicken with two forks. Add back this chicken to the slow cooker.
  7. As a topping, add grated cheese and tomatoes. Serve in a bowl.
