INGREDIENTS:
- One cup mixed nuts (almonds, pecans, peanuts, walnuts)
- ⅓ cup sugar-free chocolate chips
- A tablespoon of peanut butter (optional)
- 1 teaspoon coconut oil

- ½ teaspoon vanilla essence/cinnamon (Optional)
INGREDIENT NOTES:
Mixed Nuts:
- Take the unsalted nuts & have complete control of the taste. You may cut big ones, such as pecans or walnuts. More crunch & taste can be obtained with roasted nuts.
Sugar-Free Chocolate Chip:
- Pick brands such as Lily/any that contain stevia/monk fruit. They dissolve well & they are sweetening.
Peanut Butter (optional):
- A rich flavor & it helps bind. Unsweetened & natural. Almond butter/cashew butter equally help.
Coconut Oil:
- Assists in the melting and hardening of the chocolate. It is worth missing.
Salt & Extras:
- It gets sweetened with a pinch of salt. Cinnamon/vanilla is warming & tasty.
INSTRUCTIONS:
- Put a sheet of parchment on a baking pan.
- Then, put the coconut oil and chocolate chips in a pan.
- Melt completely over low heat. Gently stir.
- Switch off the heat. If using, add peanut butter & stir thoroughly.
- If desired, add cinnamon or vanilla.
- Add all of the mixed nuts, then mix.
- Stir till the nuts are evenly covered.
- Drop little clusters onto the prepared tray using a spoon.
- Form & lightly press.
- For 30 to 40 minutes, place the tray in the freezer.
- Once solid, remove & savor.
- Keep any leftovers in a sealed airtight bag.
TIPS:
- Put in some textured sunflower/pumpkin seeds.
- To be different, use toasted coconut flakes.
- Small ones using one teaspoon each only.
- Put sea salt /crushed freeze-dried fruit on top.
- Shape into an even form by using silicone mini muffin liners.
