White Chili Chicken

Ingredients

  • Boneless chicken, 2 Ibs fat-free
  • Chicken Broth 3 cups
  • Garlic clove 1, chopped
  • White Onion 1, chopped
  • Green chillies 2, chopped
  • Olive oil 1 tbsp
  • White beans 1-2 cups
  • Skim milk 1 cup- fat-free
  • Cumin 1tsp
  • Dried oregano 1/2tsp
  • Ground coriander 1tsp
  • Black pepper 1/4tsp
  • Chili Powder 1/4tsp
  • Salt, according to taste add
  • Fresh lemon juice 2 tbsp

Instructions

To prepare tasty Weight Watchers White Chili Chicken, follow some instructions.

Instant Pot

  1. In a large pot, add olive oil. Warm the oil over medium flame.
  2. Next, add onion, and black pepper to the pot. Cook it for 2-3 minutes, or until it softens.
  3. After five minutes, add other spices like coriander, garlic, chilli powder, salt, cumin, and dried oregano.
  4. Cook all spices for one to two minutes.
  5. Now, add chicken broth, white beans, skim milk, and chicken to the same pot.
  6. Cook all ingredients at low flame.
  7. Once it boils, turn down the flame from high to low.
  8. Cook chicken at low flame for 15-20 minutes.
  9. After cooking, remove the chicken from the pot. Shred the chicken with a spoon, or fork.
  10. Add shredded chicken to the pot, and add lime juice and cilantro.
  11. Cook over low heat for 2 to 3 minutes.
  12. Adjust the salt and black pepper amount according to taste.

  1. Take a cooker, and add onion.

  5. Cover the cooker with the cooker lid, and simmer it over a slow flame for 3-4 hours.
  6. After cooking, remove the chicken from the cooker, and shred it with a spoon, or fork.
  7. Add shredded chicken to the pot, and add lime juice and cilantro.
  8. Cook over low heat for 2 to 3 minutes.
  9. Adjust the salt and black pepper amount according to taste
