- First, you need to heat up the oil in the large nonstick pan over low flame.
- Add the cauliflower florets and, if needed, season with smoky paprika, garlic powder, black pepper, and salt.
- After six to eight minutes of cooking under cover, stirring often, the cauliflower should be tender and just beginning to color.
- In the cauliflower mixture, create four little wells. In each well, crack one egg.
- Eggs should be cooked to your liking after 3 to 5 minutes of cooking under cover.
- Evenly distribute cheese on top of the eggs & cauliflower.
- Continue to cover till the cheese melts, about one to two minutes.
- Take off the heat, add some chopped green onions as a garnish, & serve right away.
TIPS
- Small & even cauliflower cut into little pieces so that the cooking process takes a short time.
- Use a lesser amount of time to cook eggs to get a runny yolk, up to one to two minutes less.
- Add in some diced bell pepper/mushrooms.
- Sprinkle a pinch of crushed red pepper on them before serving, if you like spice.
