INGREDIENT NOTES:
CAULIFLOWER:
- We use this ingredient for making the base of the nachos. It makes the snack light and gives a hearty texture. Broccoli florets are good to use as a replacement.
OLIVE OIL:
- It roasts the cauliflower well and gives a crispy texture to the edges. Include avocado oil if you are not using olive oil.
CHIPOTLE CHILI POWDER:
- This chili powder adds a smoky and spicy taste to the cauliflower. It gives the nachos a classic chipotle-style taste. You may use smoked paprika as an alternative.
REDUCED-FAT CHEDDAR CHEESE:
- It provides a classic melted topping to the nachos. Cheddar cheese keeps the recipe light and gives plenty of cheesy taste. You may use reduced-fat Mexican cheese blend as per your preference.
PLAIN NON-FAT GREEK YOGURT:
- This yogurt makes the creamy topping without using alot of sour cream. You may use light sour cream as another option.
INSTRUCTIONS:
- First, include baking paper on the sheet and warm the oven to 220°C.
- Cut the cauliflower into florets then include them in the large bowl.
- Add olive oil, chili powder, chipotle chili powder, garlic powder, smoked paprika, salt, and cumin, then toss the florets well.
- Spread one layer of cauliflower florets in the sheet to roast for 25 minutes.
- Include the roasted cauliflower in the dish and scatter black beans on them.
- Sprinkle reduced-fat cheddar evenly on the top and roast for 5 minutes.
