  • Salt
  • 3 tbsp. granulated zero-calorie sweetener
  • One tbsp. cornstarch

INGREDIENT NOTES:

EGG WHITES:

  • We use egg whites only to prepare this cake. Beat them till fluffy to provide the airy & fluffy feel in the cake. Use the clean and dry bowl to whip the whites properly. Separate the yolks without breaking them; otherwise, the whites will not get fluffy.

GREEK YOGURT:

  • Greek yogurt adds moisture content, which helps in making the soft cake. Use a non-fat variety of the Greek yogurt so the points and calories will remain low. It provides the light, tangy taste that fixes the sweet taste. Strain the yogurt also to provide a smooth texture.

SWEETENER:

  • Monk fruit or Erythritol are zero-calorie sweeteners that are used to sweeten this cake. This sweetener will also help to provide a light flavor. We can also use lemon zest to provide a light lemon flavor in the cake.

CORNSTARCH:

  • Cornstarch helps in stabilizing the batter so the cake will not collapse after baking. It helps to maintain the texture without adding calories. If we skip the cornstarch, it will lead to shrinking the cake, so it’s better to use it.

VANILLA ESSENCE:

  • It includes a strong aroma and enriches the taste. It provides a classy feel; use lemon essence instead to add a different flavor profile to prepare this cake.

  1. We heat the oven to 325 degrees F.
  2. Place the parchment on the baking tray.
  3. Now we add the whites to the clean dish carefully.
