INGREDIENTS:

  • Two cups of fresh, bite-sized broccoli florets
  • Two cups of fresh, bite-sized cauliflower florets
  • One cup of thawed frozen corn kernels
  • 1 tablespoon of apple cider vinegar
  • Four slices of fried & crumbled turkey bacon
  • 1/4 cup of red onion, chopped finely
  • One teaspoon of Dijon mustard
  • Half a cup of light mayonnaise
  • 1/4 cup Greek yogurt, plain, nonfat
  • A teaspoon of lemon juice
  • For the taste you add salt and pepper
  • One teaspoon of honey or a sugar-free option

INGREDIENT NOTES:

Broccoli & Cauliflower:

  • Raw florets are best in order to achieve the crunch factor. First you cut them into small pieces so that they help to eat easily.

Corn:

  • Frozen corn that has been thawed will give sweetness and color. One can also use fresh-cooked corn.

Turkey Bacon:

  • Low fat & WW friendly. Crisp up. You may use regular bacon that is made of plants/reduced-fat regular bacon.

Red Onion:

  • Gives a bite and color. To make it a bit less sharp, Dip it in water for several minutes.

Dressing Base:

  • The creaminess is provided by light mayo & Greek yogurt, but not the heaviness.

Sweetener:

  • The tangy parts are balanced by a small portion of honey/sugar substitute.

Seasonings:

DIRECTIONS:

  1. In a skillet, cook the turkey bacon over the low fire it crisps. Allow to cool before crumbling.
  2. Put the red onion, broccoli, cauliflower, & corn in a big bowl. Stir well.
  3. Greek yogurt, light mayonnaise, salt, and pepper.
  4. After adding the dressing to the veggies, gently toss to cover everything.
  5. Toss again after adding the crumbled turkey bacon.
  6. Before providing, let the flavors develop in the freezer for the next fifteen (15) minutes.
  7. For optimal flavor, serve cool or slightly chilled.

TIPS:
