INGREDIENTS:
- Two cups of fresh, bite-sized broccoli florets
- Two cups of fresh, bite-sized cauliflower florets
- One cup of thawed frozen corn kernels

- 1/4 cup of red onion, chopped finely
- One teaspoon of Dijon mustard
- Half a cup of light mayonnaise
- 1/4 cup Greek yogurt, plain, nonfat
- A teaspoon of lemon juice
- For the taste you add salt and pepper
- One teaspoon of honey or a sugar-free option
INGREDIENT NOTES:
Broccoli & Cauliflower:
- Raw florets are best in order to achieve the crunch factor. First you cut them into small pieces so that they help to eat easily.
Corn:
- Frozen corn that has been thawed will give sweetness and color. One can also use fresh-cooked corn.
Turkey Bacon:
- Low fat & WW friendly. Crisp up. You may use regular bacon that is made of plants/reduced-fat regular bacon.
Red Onion:
- Gives a bite and color. To make it a bit less sharp, Dip it in water for several minutes.
Dressing Base:
- The creaminess is provided by light mayo & Greek yogurt, but not the heaviness.
Sweetener:
