INGREDIENTS:

  • One cup canned pumpkin puree
  • Two large eggs
  • One tsp. baking soda

APPLESAUCE:

  • The muffins become lighter without sacrificing their softness and moisture content by substituting applesauce for oil. It adds natural sweetness as well.

WHOLE WHEAT FLOUR:

  • Whole wheat flour gives the muffins a substantial texture and more fiber, which keeps them healthy and helps you feel fuller for longer.

PUMPKIN PIE SPICE:

  • The traditional fall flavor of these muffins comes from the pumpkin pie spice. You can use a mixture of cloves, nutmeg, and cinnamon in its place if necessary.

INSTRUCTIONS:

  6. Add the nuts and mini chocolate chips and mix gently.
  7. Fill the batter in the cups and bake these mini muffins for 15 minutes till brown.
  8. Cool the mini muffins in the tray, then transfer these muffins on the rack.
