INGREDIENTS:
- Peeled and chopped, two medium apples
- One cup of traditional oats
- 1/2 a cup of unsweetened applesauce
- Half a cup of unsweetened almond milk
- One huge egg
- 1 tablespoon of monk fruit syrup / maple syrup
- One teaspoon of vanilla essence
- 1 teaspoon of cinnamon
- Half a teaspoon of baking powder
- ⅛ teaspoon salt and two teaspoons of optional light brown sugar
- Greasing oil / cooking spray
INGREDIENT NOTES:
Apples:
- Use the crisp apples, like Granny Smith or Honeycrisp. Peel if you want a flippable version.
Oats:
- Old-fashioned oats give a nice chew. Do not use instant oats- they will become mushy.
Unsweetened applesauce:
- Hydrates and naturally flavored with the taste of apples without additives of sugar.
Almond milk:
- Low calorie and dairy free choice. Any type of plant milk will work.
Egg:
- Is a binder for the ingredients. For the vegan version use flax egg.
Maple syrup:
- Includes Gently sweetens. You can use sugar free syrup to reduce points too
Cinnamon:
- Adds a warm flavor which goes well with apples and oats.
Brown sugar:
- Optional. A little bit on top produces a nice sweet, golden crust.
INSTRUCTIONS:
- Set the oven temperature to 175°C (350°F).
- Spray / lightly oil an 8 × 8-inch baking dish.
- Mix the baking powder, oats, cinnamon, as well as salt in a big bowl.
- Combine applesauce, almond milk, egg, syrup, and vanilla in a separate bowl.
- To the dry components, add in the wet mixture. Mix till incorporated.
- Add chopped apples & fold.
- Fill the baking dish with the mixture.
- Distribute evenly.
- Top with brown sugar, if using.
- Bake till the top is firm & browned, about 35 minutes.
- Must give to it at least 5 to 10 minutes for cool down before providing.
- Warm up to serve, or freeze & eat later.
TIPS:
- Add crunch! walnuts are chopped, but the extra points are tallied.
- To add some extra flavor in it, add nutmeg or apple pie spice.
- Add a plain greek yogurt or light whipped topping.
- To make this recipe in 9×13 dish, you can multiply it by two.
- Even left overs are better the following day.
