INGREDIENT NOTES:

  • We use it instead of the chicken used in traditional Cordon Bleu. Zucchini becomes tender and sweet when we bake it. Utilize yellow summer squash as a replacement.

LEAN DELI HAM:

  • It includes a classic savory and salty Cordon Bleu taste in the dish. Lean ham makes the recipe lighter and gives fewer calories. You may use lean turkey ham as another choice.

REDUCED-FAT SWISS CHEESE:

INSTRUCTIONS:

  1. First, cover the sheet with baking paper and warm the oven to 425°F.
  2. Dry the zucchini properly, then cut it into1/4 inch thick slices lengthwise.
  3. Mix Parmesan cheese, whole-wheat breadcrumbs, Italian seasoning, black pepper, garlic powder, paprika, and salt in the bowl.
  4. Whisk egg and skim milk in a separate bowl propery to make a smooth mixture.
  5. Put one zucchini slice on the surface, then include a thin layer of ham and sliced Swiss cheese.
  6. Include another zucchini slice on top then gently press to set the layers.
  7. Repeat the steps with remaining zucchini, ham, and cheese.
  8. Now dip the zucchini sandwich in the egg mixture and turn carefully to coat both sides.
  9. Put them in the breadcrumb mixture and place them on the baking sheet.
  10. Leave some space between the pieces and use olive oil to lightly brush the tops.
  11. Bake the zucchini slices for 14 minutes, then flip the pieces and spray the other side to bake for another 12 minutes.
  12. Lastly, cool the zucchini for 3 minutes, then serve.
