Ingredients

  • Large Green Tomatoes 3
  • Cornstarch 1/4cup
  • Ground Yellow cornmeal, 1/2 cup
  • Whole Wheat Breadcrumbs, 1/2 Cup
  • Smoked Paprika 2tsp
  • Garlic Powder 2tsp
  • Kosher Salt 1tsp
  • Black pepper, 1tsp
  • Large eggs 2
  • Water 2tbsp
  • Oil 1tsp

Ingredients for aioli sauce

  • Light Mayonnaise 1/4 cup
  • Old Bay seasoning 3/4tsp
  • Hot sauce, 4tsp
  • Pickle Juice 3 1/2 tsp
  • Chopped Dill 1/4tsp

Ingredients Notes

Green Tomatoes: I recommend you use only this kind of tomato because it gives a tart flavor and is air-fried easily. The shape remains the same even after air-frying.
Cornstarch: It gives a crunchy taste to the dish.
Cornmeal: Dried corns are used to make the ground cornmeal. It gives a crispy texture and has a slightly sweet corn flavor.
Bread Crumbs: Swap the normal breadcrumbs with gluten-free or almond breadcrumbs according to your dietary needs.
Mayonnaise: We used low-fat mayonnaise to prepare the silky and creamy sauce.
Pickle Juice: I add this item because it enhances the sauce flavor.

Instructions

Preparation of aioli sauce

  1. Add old bay seasoning, dill, one teaspoon of hot sauce, half a teaspoon of pickle juice, and mayonnaise in a small bowl.
  2. Mix well until all ingredients combine. Set aside the bowl.

Preparation of Tomato Batter

  1. Rinse the tomatoes with clean water and shift them on a cutting board.
  2. Cut the tomatoes into one-fourth-inch-thick pieces by using a knife.
  3. Next, add the cornstarch to a bowl. Put aside it.
  4. Mix black pepper, smoked paprika, salt, garlic powder, breadcrumbs, and cornmeal in a separate bowl.
  5. Stir the leftover one tablespoon of pickle juice with beaten eggs, hot sauce, and water in another bowl.
  6. Arrange all bowls in a line to coat the tomatoes.
  7. Coat each piece of tomato with cornstarch and dip it into hot sauce and egg batter.
  8. Next, gently dip it into breadcrumbs. Shift the coated tomatoes on a tray.
  9. Put this tray in the fridge for twenty to twenty-five minutes before air-frying.

Air Fryer

At 400 degrees, we will fry the fries.
Transfer the coated tomatoes to an air fryer and mist it with olive oil.
Simmer it for 8–12 minutes until golden. Enjoy this dish with aioli sauce.

  1. We can try this dish using dried or fresh chopped herbs like thyme, oregano, and basil. It gives a refreshing and unique flavor.

Tips

Don’t over-air fry the tomatoes; otherwise, it will get soft.
We can’t store the green tomatoes in the fridge after buying them because the texture and flavor will change. Cook them instantly as soon as possible.
Evenly coat the slices with breadcrumbs, eggs, and cornstarch mixture; it gives a proper crunchy taste.
Shift the sliced coated tomatoes in the air fryer in a straight direction

Storage Information

Fridge: You can save the remaining slices of tomatoes in a sealed packet and refrigerate it for 4-5 days. Enjoy with any dipping sauce.
Freezer: We will pack the uncooked coated tomato slices in a clean zip-lock bag. Put this bag in the freezer for 4-5 months.
Reheating:
There are two methods to reheat.
1: Reheat the air-fried slices in a microwave oven for four to six minutes.
2nd: Rewarm the unbaked chilled slices in an air fryer for 7-9 minutes until completely warmed.
