BBQ Eggplant Shotgun Shells

These keto BBQ Eggplant Shotgun Shells are delicious & tasty. These are made with slices of eggplants and serve as a low-carb substitute for manicotti which is a high-carb and not appropriate for the keto diet. These shotgun shells have a perfect balance of cheesy, smoky & savory flavors. This eggplant shotgun is a great appetizer or snack as a finger food at parties or events. These keto BBQ Eggplant Shotgun Shells are grain-free & gluten-free because they are made with egg-plant slices instead of wheat pasta but this recipe is not dairy-free because it contains cheese. If you are dairy-sensitive you can skip the cheese or use some vegan cheese to make this recipe. This recipe is prepared in just an hour. It only contains 3g of net carbs & 2g of fiber.
