Cream Cheese Frosting

Reduced Fat-cream Cheese, 8 ounce
Organic Honey 4tbsp
Vanilla Extract 3/4tsp
Non-fat Plain Greek Yogurt (4 tbsp)

Ingredient Notes

Sweetener: We will use low-calorie sweeteners like stevia, monk fruit sweetener, brown sugar, or maple syrup.
Vanilla Extract: It is used to give an aroma to the cake.
Eggs: They bind the mixture and make a fluffy cake.
Walnuts: It gives a crunchy taste. Almonds, pecans, or other dried items also work best.
Table Salt: I used half a teaspoon to adjust the flavors.
Fat-cream Cheese: We used fat-cream to lower the calories. I prefer to use only normal-temperature cream so it blends everything smoothly.

Instructions

  1. For baking, adjust the oven temperature to 350 degrees.
  2. Add baking soda, all-purpose flour, baking powder, sugar, cinnamon, and salt in a bowl.
  3. Mix well all ingredients.
  4. Next, add beaten eggs and sugar together. Stir it until it gives a smooth texture.
  5. Pour apple sauce and oil into this mixture. Combine well.
  6. Combine wet items with dry items to make them lumps-free.
  7. Next, add chopped walnuts, pineapple, and carrots to this flour batter.
  8. Thoroughly combine the mixture by using a spoon.
  9. Evenly distribute the cake batter into a baking tray by using a spoon.
  10. Bake it for 25-35 minutes in a warm oven.
  11. After 40 minutes, check the cake by inserting a fork or toothpick.
  12. Transfer the cake to a wire rack and cool it for 10-12 minutes.
  13. Meanwhile, we will prepare frosting.

Preparation of Cream Cheese Frosting

  1. Stir cream cheese and yogurt in a mixing bowl until velvety.
  2. Next, mix cinnamon, honey, and vanilla extract in the same bowl.
  3. Put this bowl in the fridge for twenty to thirty minutes.

  1. Decorate the first layer of cake with half frosting.
  2. Next, add the second layer over the first layer and top it with the leftover frosting.

Nuts: You can add nuts to your choice. Raises will fit well. We will add raisins to the cake batter and mix it. Check the Weight Watchers points and adjust them accordingly.
