Ingredients

  • Beef 1 pound, uncooked
  • Onion 1, chopped
  • Garlic clove 1, chopped
  • Olive oil 1-2 tsp
  • Celery rib 1 medium, chopped
  • All-purpose flour 2 tbsp
  • Chicken broth 3 cups
  • Low fat evaporated milk 1cup
  • Low-fat cheddar cheese 8oz, cut into cubes
  • Paprika 1/2 tsp
  • Salt 1/4 tsp or according to taste
  • Black pepper 1/8tsp
  • Baked low-fat corn tortilla 24, crumbles

Instructions

  1. For this recipe, we will take a large non-stick pan.
  2. Grease the non-stick with olive oil and add ground beef. Cook beef at medium flame for about 40 seconds.
  3. Add chopped garlic, onion, and celery to the same pan.
  4. Stir it continuously for about 5-10 minutes until vegetables are tender and crispy.
  5. Add cooked beef, chopped garlic, onion, celery, salt, and pepper in a crock pot.
  6. Also, add chicken broth to the same crock pot and cook it at slow medium for about 2 hours.
  7. Meanwhile, take a small cup. Add all-purpose flour and water, and mix it until lump-free.
  8. Add this mixture to a crock pot.
  9. Mix all ingredients with the help of a wooden spatula.
  10. Add evaporated milk, cheddar cheese, and paprika to the same pot.
  11. Put a cover on the crock pot and simmer it for an additional 20 minutes on low flame.
  12. The hot and spicy soup is ready to eat and serve.
  13. Top this soup with crushed chips.
