Ingredients

For the Enchiladas Sauce

  • Less sodium Chicken broth 3/4cup
  • Salt 1/4tsp, or to taste
  • Black Pepper 1/4 tsp

For the Chicken

  • Olive Oil 1tsp
  • Cooked Boneless Chicken 10 ounces
  • Diced Onion 1cup
  • Chopped garlic cloves 2
  • Cilantro 1/4cup
  • Salt 1/4tsp
  • Cumin 1tsp
  • Dried Oregano 1/2tsp
  • Chipotle Chili Powder 1tsp
  • Chicken Broth 1/3cup
  • Tomato Sauce1/2CUP
  • Whole Wheat Flour Tortillas 8-10
  • Low-fat grated cheddar chees
  • Olive oil spray
  • Chopped Scallions, 2tbsp

Instructions

Making Of Enchiladas Sauce

  1. Add olive oil to a medium-sized pot.
  2. Next, add garlic to this warm oil and cook it for 25-30 seconds.
  3. After that, add Chipotle Chiles, cumin, tomato sauce, chili powder, chicken broth, and pepper.
  4. Cook these ingredients with sautee garlic until the broth boils.
  5. Slow down the stove flame and cook it over a slow heat for about 5-10 minutes.
  6. The tangy Enchiladas Sauce is ready. Keep aside the sauce.

Making of Chicken

  1. Place a pan on the burner over medium flame and drizzle with olive oil. Heat it for 2-3 minutes.
  2. Add onion and garlic to this pan. Sautee it over low medium heat for 3-4 minutes.
  3. Next, add chicken broth, cumin, tomato sauce, cilantro, chili powder, cooked chicken, and salt to this pan.
  4. Mix all ingredients. Simmer it for 5-6 minutes until the broth texture thickens.
  5. After 6 minutes, set aside the pan.

Oven

  1. Set oven temperature to 400 degrees.
  2. Meanwhile, mist the baking tray with olive oil.
  3. Now, take whole wheat tortillas. Each tortilla is filled with the chicken mixture and the enchilada sauce.
  4. Add grated low-fat chees over the mixture.
  5. Wrap these tortillas with aluminum foil.
  6. Transfer the wrapped tortillas to a baking tray.
  7. Bake it for 15-20 minutes, until the outer surface is golden brown.
  8. Serve the hot Enchilada with homemade ketchup, or dip.

Air fryer

  1. Place the tortilla on a clean surface.
  2. Spread enchilada sauce over all the tortillas, add the chicken mixture and the last layer of grated cheese.
  3. Cover the rolls with aluminum foil so the mixture doesn’t overflow with tortillas.
  4. Place these cheesy tortilla warps in a greased air fryer.
  5. At 400 degrees, air fryer for 10-15 minutes until light brown.
  6. Yummy Enchilada is ready to eat.
