INSTRUCTIONS:

  1. Set the oven temperature to 175°C (350°F).

  4. Mix the yogurt, applesauce, milk, egg, & vanilla in a separate bowl.
  5. Don’t overmix; just blend the wet components into the dry while they are smooth.
  6. Fill the baking dish with batter, then level the top.
  7. Combine the cinnamon, melted butter, and brown sugar substitute in a small bowl.
  8. Sprinkle spoonfuls of the cinnamon mixture over the batter. Swirl using a toothpick or knife.
  9. Bake for thirty to thirty-five minutes, till it’s golden brown and a toothpick pushed in the center of the cake comes out clean.
  10. Allow to cool for 10 minutes on an aluminum rack. Mix the glaze components in a small bowl while smooth.
  11. If using, drizzle glaze over the cooled cake.
  12. Before serving, cut into nine pieces.

TIPS:

  • Avoid hyper-mixing the batter, as this causes it to be rough.
  • In case of omitting glaze, put a pinch of cinnamon before or on top of the cake.
  • Use a muffin tin to serve bite-sized cinnamon coffee cake.
  • To be extra naughty add a tablespoon of light cream whipped.
  • Make two times as much and put one in the freezer.
