Ingredients

  • Red Bell pepper 1
  • Red onion 1/2cup
  • Garlic Cloves 2, chopped
  • Vegetable broth 3cups
  • Olive oil 4tbsps
  • Curry Powder 1.5tbsp
  • Chilli powder 1/4tsp
  • Cayenne Pepper, a pinch. You can also skip it. It’s optional.
  • Salt 1/2 tsp, or add according to taste
  • Black pepper 1/2 tsp
  • Water 1.5 cup
  • 1 head of cauliflower, chopped

Prepare delicious curry cauliflower soup in the following steps.

Stovetop

  • Add chopped garlic with 2 tablespoons of broth in a large pot.
  • Simmer it for 3 minutes over a medium flame.
  • Now add bell pepper and onion. Sautee it.
  • Next, add cauliflower, cayenne pepper, chilli powder, curry powder, salt, and black pepper to this pot. Mix it well.
  • Now, add 3 cups of vegetable broth with water. Stir it well.
  • Boil all ingredients over a slow flame for 10- 15 minutes.
  • When the soup boils, let it cool down to room temperature.
  • After that, blend it with the help of a blender to make a puree.
  • Serve hot and spicy soup with the crackers and dips.

Instant Pot

  • Spray the instant pot with olive oil.
  • Now, add garlic, bell pepper, and onion to this pot.
  • Sautee all ingredients until the onion colour changes.
  • Next, add cauliflower, cayenne pepper, chilli powder, curry powder, salt, and black pepper to this pot. Combine all ingredients.
  • Now, add 3 cups of vegetable broth with water.
  • Cook all ingredients at high pressure for 10 minutes.
  • Once the soup is cooked, separate half the soup. Blend it with the immersion blender.
  • Add this blended soup with the remaining soup.
  • Stir it for an extra 2-3 minutes.
  • The soup is ready. Enjoy it.

  • Take a frying pan. Heat it over medium flame and mist it with olive oil.
  • Next, add cooked chickpeas, chilli powder, paprika powder, salt, and black pepper to this pan.
  • Stir all ingredients until it cooks well.
  • Now, turn off the burner, and add it over the soup.
  • To make a creamier texture, add fat-free coconut milk.
