- 2 tbsp. coconut oil
- ¼ cup chopped onion
- 1 medium red pepper
- ¾ tsp. Salt
- ½ tsp. pepper
- 1 medium jalapeno
- 1 piece garlic
- 2 tsp. Paprika
- ½ tsp. coriander
- ½ cup diced tomatoes
- 1 lb. cod
- 1 & ½ cups full fat coconut milk
- ½ cup vegetable, fish, or chicken broth
- 2 tbsp. fresh lime juice
- Chopped cilantro
INGREDIENT NOTES:
WHITE FISH:
- Select fish with steady flesh because it will be cooked in the broth for a long time. I prefer to use cod since it keeps well and gets delicate. You may substitute shrimp for the fish or use them in addition to it.
COCONUT MILK:
- The broth is thick and silky because of the utilization of full-fat coconut milk.
BROTH:
- You can utilize chicken broth, vegetable broth, or fish broth.
RED PEPPER:
- I utilized only one red pepper but you can also include red and yellow bell pepper both. Slice the bell peppers thinly to make sure the even sharing of the bell peppers in the soup.
TOMATOES:
- It tastes and looks better with fresh diced tomatoes, but canned tomatoes can work well.
ONIONS:
- To make this recipe flavorful and low in carbohydrates, I just used a quarter cup of onion.
JALAPENOS:
- Although a variety of chilies can be used for moqueca, jalapeños are the most readily available. If you want your food milder, scrape off the seeds. If necessary, you can exclude it as well.
LIME:
- Include the lime juice in the end of the recipe; it improves the dish’s taste in general.
CILANTRO:
- The completed soup gains color and taste when chopped cilantro is sprinkled on top.
SEASONING:
- Black pepper, salt, coriander, garlic, and paprika powder are utilized to season the soup.

- Heat the oil in a large saucepan on medium heat until the coconut oil gets melt.
- After melting, add the onions and cook for four minutes or till they are transparent.
- Pepper powder & salt is utilized to season the onions & add the bell pepper.
- Continue to cook the vegetables for more 2 to 3 minutes or till the vegetables get soft.
- Cook for another minute or so, or till they get aromatic, after adding the jalapeño, garlic, paprika, and coriander.
- Add the chopped tomatoes and mix.
- Place the fish over the veggies, and then cover the fish with the broth and coconut milk.
- Put the heat at low and cook the fish for about twenty minutes or until the fish will get tender.
- Taste and modify the spices. Garnish the soup with cilantro and mix the lime juice before you serve soup.
TIPS:
- Since coconut oil is more readily available, I used it instead of palm oil, which is what most recipes utilize. However, you could use any healthy oil, such as olive or avocado oil.
- Because it’s more conventional and adds a rich, smooth texture to the stew, I utilize full-fat coconut milk. If you have to reduce the saturated fats you can utilize the light coconut oil. Even while it won’t be the same, it should still taste great!
STORAGE INFORMATION:
FRIDGE:
- Put the fish stew in a sealed container and store the stew for around three months.
FREEZER:
- Avoid freezing this fish stew as it will ruin the taste & texture of the stew.
