INGREDIENTS:
- 1 medium zucchini
- ½ tsp. salt
- 4 large eggs
- 6 ounces sharp cheddar (grated)
- 1 piece of garlic (minced)

- 2 tsp. baking powder
- 3 tbsp. heavy cream

CHEDDAR CHEESE:
- I use cheddar cheese in my zucchini waffles. We can also use combination of parmesan and mozzarella, just keep in mind to pick keto-friendly cheese.
ZUCCHINI:
- I grated the zucchini with skin for extra fiber content. Use properly squeezed zucchini for this recipe.
GARLIC:

INSTRUCTION:
- Take a sieve and put the grated zucchini in with ¼ tsp. of salt to properly drain its water content for at least an hour.
- Take a waffle pan and put it to heat and brush the oil on it properly.
- Take a large bowl, add 4 large eggs and mix the eggs. Add 6 ounces of grated cheddar cheese, 1 grated zucchini, 1 piece of minced garlic, and add ¼ tsp. salt, pepper, and cayenne mix all of them with the whisk.
- Include the ¾ cup of almond flour and 2 tsp. powder (baking) and fuse it with the batter.
- Then add the cream and mix it again.
- With the help of scoop take about ¼ cup of zucchini waffle batter and put it on waffle iron cover all of its corners with the batter and close the waffle iron.
- Cook the zucchini waffles till it gets a nice golden brown color.
- Follow the same instruction for the whole waffle making.
TIPS:
- Squeeze your grated zucchini as hard as you can as it will make the batter thin and gooey.
