Instructions:

  1. Combine the chicken, sharp cheddar, egg, almond meal, parsley, garlic, chili powder, salt, and flakes of red pepper in a large mixing basin.
  2. Mix everything thoroughly with your hands.
  3. Form the mixture into tiny patties roughly.
  4. There should be 24–26 patties.
  5. Move to the baking sheet that is already set and chill for an hour.
  6. Place one tablespoon of oil and half a tablespoon of butter in a big pan over medium heat.
  7. Add 8–10 patties.
  8. Sauté both ends for two minutes.
  9. Repeat two more times, or while all the patties are complete, then place the completed patties on a platter and cover them with paper towels to dry.
  10. To prevent scorching the baked-on cheese, set the microwave to a normal temperature.
  11. Prepare and present alongside a portion of blue cheese or ranch dressing.
