Ingredients:

  • 1/2 cup almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons erythritol or any keto-friendly sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sugar-free chocolate chips
  • Avocado oil or coconut oil for cooking

Directions:

  1. I took a mixing bowl and whisked together salt, coconut flour, erythritol, baking powder, and almond flour.
  2. Then I took a separate bowl and beat the eggs until they became fluffy. I added in the almond milk and vanilla extract and whisked until it became combined.
  3. Then I poured the wet ingredients into the dry ingredients and stirred until a batter formed.
  4. Fold in the chocolate chips.
  5. I heated a non-stick pan/griddle over medium heat and added avocado oil/coconut oil.
  6. Once the pan became hot, I scoop the batter onto the pan by using a 1/4 cup measuring cup .
  7. Cook for 2-3 minutes.
  8. Flip the pancake and cook for an additional 1-2 minutes.
  9. I did the same with the remaining batter, and you may add more oil as needed.
