INGREDIENTS:
- Essence of vanilla, 1 teaspoon
- 1.5 cups of flour (almond)
- An egg, large
- 0.25 cup of keto sweetener(swerve brown)
- Three tbsp of melted butter
- One tsp of baking powder
- Salt, 1/4th teaspoon
- 1 tsp of powdered cinnamon
- 3 teaspoons of keto granular sweetener(swerve)

INSTRUCTIONS:
- Grab a mini bowl and a normal-sized vessel & gather all the items.
- Include & mix sweetener (swerve granular) and cinnamon powder in it.
- Pick a cookie sheet & spread the parchment over it.
- Heat the oven to 300 degrees F & start your work.
- Beat the egg well in that normal-sized vessel.
- Now mix in the essence of vanilla.
- Grab another vessel & include all the dry items in it and mix well.
- Now shift the beaten egg mixture to the solid items.
- Include 2 tablespoons of melted butter.
- Combine well to form the dough.
- Spread the dough onto the cookie sheet that has been prepared.
- Dust with some cinnamon sugar on the surface.
- Shift the cookie sheet to the oven & bake them for around 25 mins.
- Turn the oven down to 250 degrees Fahrenheit and take them out.
- Allow their temperature to come down.
- After that slice them length-wise into the pieces of same size.
- Place them so that their cut sides come into contact with the cookie sheet’s base.
- Apply the melted butter using the brush on them.
- Dust with the sugar of cinnamon again.
- Shift the cookie sheet again in the oven for another ten mins.
- After 10 minutes, change the side of the biscotti.
- Apply oil & then dust with the cinnamon sugar again.
- Shift the cookies back into the oven for the next ten mins.
- After that time, turn the oven off & leave the cookies inside it for sixty mins.
- Shift the cookies from the oven to the counter to completely cool them.
- You may sprinkle the rest of the cinnamon sugar if you like.
- You will have the most crispy biscottis once they are cool completely.
TIPS:
- When you are going to bake your biscottis, the second time then don’t forget to lower the temperature. Otherwise, they will crisp up along with over-browning.
- These biscottis are lightly sweet as compared to the regular ones. If you want to have the more sweet version, then feel free to increase the sweetener quantity. You may also go for an extra sprinkling of cinnamon sugar.
- The biscottis are extra soft & fragile while you are cutting & turning them. So, hold them with care by using gentle hands.
- You can slice the pieces smaller than I made.

- If you have a big stock of these biscottis then keep their sealed jar in the fridge. You may enjoy them for another week.
FREEZER:
- These cookies will stay best in the freezer. They might be able to get moisture from that location.
The solution is to place them back in the oven (heated) for around fifteen mins. After that, they will be perfectly crispy upon cooling.

Is it possible to slice the dough before the first baking?
- If you do this then biscottis will brown overall. It’s totally up to your choice. If you want to slice before baking, then lower the oven’s temperature & extend the baking time.
Can we use Xantham gum here?
- Its function is to thicken the liquid/act as a binding agent. It also results in a soft product. The theme of our biscottis is to be crunchy & hard.
