Keto Coconut Delight is a wonderful treat for coconut lovers. It has both bake and no-bake crust options. It consists of five creamy yet heavenly tasty layers. This recipe is so tasty and creamy that no one can tell that it is such a low-carb and Gluten-free dessert. Keto Coconut Delight is easy to make and freeze. You just Have to sprinkle the coconut flakes right before serving. It just requires fifty minutes of total time.

EQUIPMENT:

  • Pyrex glass baking dish, Large, 1.
  • Mixing bowls
  • Oven

INGREDIENTS:

  • Coconut-Almond flour Crust:
  • 90 grams of shredded coconut, 1 cup
  • 1/3 cup of Whey Protein powder.
  • 180 grams of Almond flour, 2 cups.
  • Salted and Melted Butter, Six tablespoons.
  • One-third cup of low-carb sugar.
Coconut pudding:
  • One cup of Heavy Cream
  • 1/3 cup of Coconut Milk
  • Erythritol One-third cup
  • Xanthum gum 1/4 teaspoon.
  • 3 Large egg yolks
  • Two Whole Eggs, Large.
  • Corn starch 1 tablespoon
  • One teaspoon of Coconut Extract
  • Vanilla extract 1 teaspoon
  • A pinch of Salt.
  • Butter 2 Tbsp.
  • 1/2 teaspoon of Stevia Glycerate
  • A three-fourth teaspoon of Gelatin proofed with One tablespoon of water.
Optional Coconut Topping
  • 100 grams of Sugar-free flaked or desiccated coconut, 1 and 1/4 cup.

INSTRUCTIONS:

GET THE CRUST READY:
  1. Grind the half amount of sugar-free coconut in a spice jar at a time.
  2. Make the powder of the sweetener.
  3. Add the powdered sugar, Grounded coconut powder, Protein powder, and Almond powder in a mixing bowl. Combine them properly.
  4. Now add Melted Butter and mix to make the mixture look like wet sand.
  5. Spread this crumbled mixture in a glass baking dish. Cover it with a wax paper. Flatten the layer with flat-bottomed glass.
  6. You can freeze this crust or bake it at 350 degrees Fahrenheit to get a cookie-like crust.
PREPARE ALL THE LAYERS:
  • PREPARE THE LAYER OF COCONUT PUDDING:
  1. Place the Cream and Coconut milk on medium to low heat in a deep saucepan.
  2. In a heat-proof mixing bowl, add Corn starch, Xanthum gum, Erythritol, and salt and combine them properly.
  3. Now add whole eggs and egg yolks and combine them with dry ingredients properly.
  4. Turn off the flame when the cream starts to boil.
  5. Pour the cream and coconut milk mixture over the mixture of egg while continuously stirring it.
  6. Again put the saucepan over the stove.
  7. Transfer the Whole mixture to that saucepan and continuously stir it with a whisk for three and a half minutes. At this point, it starts to thicken.
  8. Cook for One more minute while whisking a little fast.
  9. Set the strainer on that Mixing bowl.
  10. Remove the mixture from the stove and pass it from the strainer to make it smooth.
  11. Stir it to make it cool slightly.
  12. Now cover it and place it in an ice bath or refrigerator for 6-8 hours.
  13. The recipe yields about 2 cups of coconut pudding.
  • LAYER OF WHIPPING CREAM
  1. Add powdered sweetener and Vanilla essence to the Heavy cream.
  2. Whip the cream to make it stiff and fluffy. Leave it in the fridge to set.

LAYER OF CREAM CHEESE

  1. Heat cream cheese in the microwave till it softens.
  2. Add powdered sweetener and almond milk.
  3. Whip it with a beater till it becomes double in volume.
  4. Fold the 1.5 cups of Whipped cream, Half a cup at a time.
  5. Let it set in the refrigerator.

ASSEMBLING THE DESSERT:

  1. Take the Baked or No-Bake Coconut crust.
  2. Pour the Cream cheese Layer over the Coconut Base. Evenly distribute it. Allow it to settle inside the fridge.
  3. Spread the even layer of Whipped Coconut Pudding above the layer of cream cheese. Then refrigerate it to set.
  4. Now cover the Coconut pudding layer with the leftover whipped cream. Refrigerate for several hours until set.
  5. Sprinkle with Sugar-free coconut flakes or desiccated coconut.
  6. Your dessert is ready to serve and enjoy.

TIPS:

For a good presentation, add coconut flakes at the time of serving after defrosting if it is frozen.
Depending on your needs, you can either double or trim the original recipe in half.

Add topping once the delight is defrosted completely and ready to serve.
