This lasagna is made with thinly sliced zucchini instead of pasta noodles and uses a mixture of cottage cheese, mozzarella cheese, and ground beef for the filling. Ingredients:
- 2 medium-sized zucchinis, sliced thinly
- 1 lb. ground beef
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup tomato sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- Optional: sliced bell peppers, mushrooms, or onions
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium heat until it’s fully cooked. Drain off any excess fat.
- Add the tomato sauce, dried basil, dried oregano, and salt and pepper to the skillet. Stir well to combine and remove from heat.
- In a separate bowl, mix together the cottage cheese and shredded mozzarella cheese until well combined.
- Spread a thin layer of the ground beef mixture on the bottom of a 9×13 inch baking dish.
- Layer the sliced zucchini on top of the ground beef mixture.
- Add a layer of the cheese mixture on top of the zucchini.
- Repeat the layers of ground beef mixture, zucchini, and cheese until all the ingredients are used up, ending with a layer of the cheese mixture on top.
- Sprinkle the grated parmesan cheese on top of the lasagna.
- Optional: add sliced bell peppers, mushrooms, or onions on top of the cheese.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden brown and bubbly.
- Let the lasagna cool for a few minutes before slicing and serving.
