Keto Cottage Cheese Lasagna

Keto Cottage Cheese Lasagna is a low-carb version of the classic Italian dish that is perfect for those following a ketogenic or low-carb diet. This lasagna is made with thinly sliced zucchini instead of pasta noodles and uses a mixture of cottage cheese, mozzarella cheese, and ground beef for the filling. It’s a delicious and satisfying meal that is easy to prepare and can be customized with your favorite vegetables or spices. Plus, it’s a great way to sneak in some extra veggies into your diet!

Ingredients:

  • 2 medium-sized zucchinis, sliced thinly
  • 1 lb. ground beef
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup tomato sauce
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Optional: sliced bell peppers, mushrooms, or onions

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat until it’s fully cooked. Drain off any excess fat.
  3. Add the tomato sauce, dried basil, dried oregano, and salt and pepper to the skillet. Stir well to combine and remove from heat.
  4. In a separate bowl, mix together the cottage cheese and shredded mozzarella cheese until well combined.
  5. Spread a thin layer of the ground beef mixture on the bottom of a 9×13 inch baking dish.
  6. Layer the sliced zucchini on top of the ground beef mixture.
  7. Add a layer of the cheese mixture on top of the zucchini.
  8. Repeat the layers of ground beef mixture, zucchini, and cheese until all the ingredients are used up, ending with a layer of the cheese mixture on top.
  9. Sprinkle the grated parmesan cheese on top of the lasagna.
  10. Optional: add sliced bell peppers, mushrooms, or onions on top of the cheese.
  11. Cover the baking dish with foil and bake for 30 minutes.
  12. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden brown and bubbly.
  13. Let the lasagna cool for a few minutes before slicing and serving.
