  • 1.5 tsp baking powder
  • Three eggs, big
  • Powder of cinnamon, 3/4 tsp
  • Softened butter, two teaspoons
  • 1/4 tsp of ginger (ground)
  • Heavy cream, 1/2 cup
  • One-fourth teaspoon of nutmeg
  • 1 cup of pumpkin puree
  • A quarter tsp of salt
  • Substitute of brown sugar, 1/4 cup
  • One-eighth teaspoon of cloves (ground)
  • 1/2 cup of swerve sweetener, swerve

INSTRUCTIONS:

  1. Pick a muffin tin that has 12 cups & apply oil to it.
  2. Heat the empty oven to 375 degrees F.
  3. Pick a little bowl & mix the coconut flour, spices, & baking powder.
  4. In another big container, include all the other items & process it at normal speed.
  5. Once you blend them, then include the mix of coconut flour in that mixture.
  6. Combine all the items using an electric blender (hand) at low speed.
  7. Next, include the cranberries & fold them to distribute evenly.
  8. Fill the batter in the greased muffin tins.
  9. Shift the muffin tray into the oven to bake.
  10. Check them after 25/30 mins.
  11. If they come back like a spring on pressing them from the center, they are ready.
  12. Once the muffins are baked well, shift them to the rack from the oven.
  13. Detach the muffins from their pan once they cool down for 20/25 minutes.
  14. Allow them to completely cool on the cooling rack.

TIPS:

If you want your muffins not to be heavy, then replace 1/2 amount of oil with a sauce of apples.

Always sift the flour of coconut to mix it better with other ingredients.

If you can’t get fresh cranberries, then you may use frozen ones. The frozen ones will spread their color, but the taste will be perfect.

Use the little-sized spatula to have the ideal shape of the top of the muffins.
