INGREDIENTS:

FOR CAKE:

  • Cream of tartar, single pinch
  • Eggs, 2
  • Salt, one pinch
  • Cheese (mascarpone/cream), two oz
  • 20 drops of stevia sweetener (vanilla-flavored)

FROSTING:

  • One-fourth tsp of espresso powder (instant)
  • 2 tablespoons of softened butter
  • Two tbsp of keto sweetener (swerve)
  • An ounce of cheese (cream/mascarpone)

INGREDIENT NOTES:

ESPRESSO POWDER:

  • Use the instant powder of espresso to have the coffee flavor. You can also swap the espresso powder with cocoa powder or the essence of vanilla, lemon, almond, orange, etc.

BUTTER:

  • Always use original, high-quality butter to make the frosting. Make sure that your butter has no salt in it.

CHEESE (MASCARPONE/CREAM):

INSTRUCTIONS:

CAKE MAKING:

  1. Pick the four baking pans (3-inch) & a roll of parchment paper.
  2. Cover the sides & bottom of all pans using the parchment.
  3. Heat the empty oven to 300 degrees F.
  4. Place two big-sized vessels on your working shelf.
  5. Crack the eggs & shift yolks in one vessel & whites in the other.
  6. Include the salt, cheese, and sweetener in the yolks.
  7. Whisk well using the electric mixer.
  8. Now, clean the whisks of the mixer & beat the whites(egg)
    with cream of tartar.
  9. Continue beating with the electric mixer till you notice the formation of peaks(stiff).
  10. Shift the egg white to the egg yolk mixture.
  11. Use gentle hands to fold them so that the fluffiness of the whites would not destroyed.
  12. Divide the batter in all the four molds ( prepared).
  13. Shift them all in the oven for only 25 or 30 minutes.
  14. As their top become golden brown, shift them from the oven to the counter right away.
  15. After a rest of 5-7 mins, separate the cloud cake from their pans.
  16. Allow to cool them on the racks & wait for them to dry.

FROSTING:

  1. Pick a normal-sized vessel & include all the items of frosting in that.
  2. Whip them till they become airy & foamy.
  3. Place a cake and cover it with the frosting.
  4. Follow the third step till the cake stacking is complete.
  5. Now, cover the whole cake with the coffee buttercream frosting.
  6. Smooth the frosting well using the spatula.
