FOR THE CAULIFLOWER CRUST:
- 1 medium cauliflower head

- 2 oz. regular cream cheese
- 1 cup blanched almond flour
- 1 large egg
- ½ tsp. garlic powder
- ¼ tsp. salt
- ¼ tsp. black pepper
FOR THE PIZZA TOPPING:
- ½ pound turkey sausage
- Two tbsp. olive oil
- 2 garlic pieces
- 1 cup part-skim mozzarella cheese
- ¼ cup grated Parmesan cheese
- ½ tsp. dried oregano
- ¼ tsp. red pepper flakes
- Fresh basil
INGREDIENTS NOTES:
CAULIFLOWER:
- I use the medium cauliflower to make the pizza. You can rice the cauliflower by yourself or use the pre-shredded cauliflower as well.
SHREDDED MOZZARELLA CHEESE:
- I use the ideally part-skimmed Shredded mozzarella cheese for a little crispier texture of the pizza.
CREAM CHEESE:
- We use the regular cream cheese to create a dough-like & smooth texture. We have to make sure it’s softened so that the mixture blends well before adding the mozzarella.
ALMOND FLOUR:
- We have to use blanched almond flour instead of almond meal since it has a finer texture and a more neutral flavor. Almond flour will not make a gritty crust.
EGGS:
- The egg gives the dough structure and aids in binding. For the greatest consistency, be sure to fully incorporate it with the cheese and almond flour.
GARLIC POWDER:
- Garlic Powder adds a delicate garlic flavor, and a tiny bit of garlic powder is added to the crust.
OLIVE OIL:
- Olive Oil is used to pan-fry the garlic & turkey sausages and gives the pizza a deep flavor. You might use avocado oil instead, which has a moderate flavor and a high smoke point.
TURKEY SAUSAGES:
- You can use cooked turkey sausage links or lean ground turkey. We can take away the covering and disintegrate the sausage if you’re using links. Turkey sausage is leaner in comparison to regular pork sausage and still has a lot of taste, making it a good choice for the keto diet.
