INGREDIENTS:
- 12-pound turkey
- 9 ounces butter
- 2 tablespoons dried thyme
- Two tablespoons rubbed sage
- 2 tablespoons dried minced onion

TURKEY:
- We can use the fresh turkey, or we can also use the frozen turkey as well but keep in mind that you can properly thaw the turkey before use for at least 2 days before use.
BUTTER:
- I use salted butter to make this recipe but you can also use unsalted butter as well just include 1 tsp. of salt to make the compound butter.
CHICKEN STOCK:
- I use chicken stock to prepare this herb roasted butter, but we can also utilize beef, chicken, or turkey stock for this purpose.
HERBS & SPICES:
- I use dried herbs to make this recipe, but you can also use fresh herbs don’t forget to slightly increase the amount.

INSTRUCTION:
- Heat the oven to 350 degrees F.
- Take a mixing bowl and add the butter, sage, onion powder, thyme, garlic powder, pepper powder, & salt & mix all of them till they get properly combined.
- We can separate 1/3 of a mixture of the herbs & spices to apply over the turkey.
- You can put the turkey on an even surface and utilizer the fingers to detach the skin from the meat without ripping the skin.
- Than we can take some compound butter in your hand & apply the butter between the skin & meat as far as you can.
- Then apply the remaining 1/3 of the herb butter over the turkey and cover it properly.
- We can attach the roasting rack to the roasting pan and add the chicken stock to the pan.
- Then put the seasoned turkey on the rack and bake them for 3 hours or till they reach the temperature of 165 degrees F.
- When it is done, take it out and put it on the shelf for 15 to 30 minutes then slice the turkey with the knife.

TIPS:
- We should thaw the turkey properly before cooking for at least 24 to 48 hours in the fridge; avoid thawing the turkey at ambient temperature to prevent it from getting spoiled.
- You should gently loosen the skin to put the butter under it without tearing it because this step will help to make the juiciest turkey.
- We should not just let the turkey bake for 3 hours without basting it, baste the turkey every 15 to 20 minutes with pan dripping to get the perfect golden & crispy skin. But you cannot open the door too frequently because it can affect the cooking temperature.
- If we want to make this more aromatic and tasty then we should use fresh herbs, it can enhance the taste of the Turkey and we can also garnish the roast with fresh herbs.
