Recipe: Keto Hot Pockets

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 2-3 tablespoons ice-cold water

For the Filling (Customizable):

  • 1/2 pound cooked ground sausage, bacon, or any cooked keto-friendly protein of your choice
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Optional: keto-friendly sauce (e.g., tomato sauce, pesto) for dipping

Instructions:

Preparing the Keto Pastry:
  1. In a food processor, combine the almond flour, coconut flour, xanthan gum, and salt. Pulse to mix.
  2. Add the cold, cubed butter to the dry ingredients in the food processor. Pulse until the mixture resembles coarse crumbs.
  3. Add the egg and 2 tablespoons of ice-cold water. Pulse until the dough comes together. If it’s too dry, add an additional tablespoon of water.
  4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for about 30 minutes.
Assembling the Keto Hot Pockets:
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Divide the chilled dough into 4 equal portions.
  3. Roll out one portion of dough between two sheets of parchment paper to form a rectangle or square, about 1/8-inch thick.
  4. Place your desired fillings on one-half of the rolled-out dough, leaving a border around the edges. Be sure not to overfill.
  5. Fold the other half of the dough over the fillings to create a pocket. Press the edges to seal.
