INGREDIENTS:
- Four lb. chicken breast (without bone and skin)
- One tbsp. Italian seasoning
- ½ tsp. sea salt
- ½ tsp. pepper powder
- 1 cup broth of chicken

CHICKEN:
- Although you may make boneless chicken thighs using my Instant Pot chicken recipe, I utilize chicken breast without skin and bone every time. Either frozen or fresh chicken will work well.
ITALIAN SEASONING:
- Although it’s not required, I enjoy my Italian seasoning in this. It makes the chicken taste better and complements practically anything I would use it for. If you want like more neutral flavor, you may omit it.
SALT AND PEPPER:
- I simply use a little salt because there is some in the chicken broth. I suggest adding more salt if your broth is low in it.
CHICKEN BROTH:
- For the Instant Pot’s pressure to rise, at least one cup of water or liquid is needed. Additionally, liquid gives your chicken a rich, moist texture. Although water can be used, I like the flavor of broth. You may use bone broth, store-bought chicken broth, or even your chicken broth.

INSTRUCTION:
COMBINE THE INGREDIENTS:
- First, put the chicken in the Instant Pot’s bottom. Add salt, pepper, and Italian seasoning. Pour the chicken stock over the breast of the chicken. Do not mix.
COOK THE CHICKEN:
- Shut the lid and choose the “Manual” or “Poultry” preset (for high pressure). Depending on how much chicken you have, determine the time.
RELEASE THE PRESSURE:
- Give the pressure at least five minutes to naturally subside. You may then either continue the natural pressure release or switch the valve to “vent” for a rapid discharge.
SHRED:
- Shred the chicken breast by using two forks or shred the chicken by utilizing a hand mixer.
TIPS:
- Instead of pouring the soup over the chicken, pour it around it. In this manner, you won’t wash off the spices while still having enough liquid for the Instant Pot.
- Await the natural release of the pressure to get the tender & juiciest chicken. Don’t worry, I always use rapid release (after waiting five minutes), and this is not necessary. However, when I wait for the natural release to finish, I can shred the chicken more easily and I can certainly sense a difference in softness.
- I check the interior temperature using this meat thermometer. Whether not, replace the cover and wait five minutes to see whether the residual heat causes it to do so. Seal once again and pressure cook for an additional two minutes if it does not reach the required temperature.
- Whole chicken breasts can also be enjoyed. Although you don’t have to shred the chicken, I usually prepare this dish when I need to shred the chicken. You may cook my Instant Pot chicken and rice as a one-pot dinner or serve it as a meal with your preferred side dish.
Since Italian spice complements practically anything, I typically use it for my Instant Pot shredded chicken. However, I adore it with my taco seasoning for Mexican meals. Alternatively, you may just add individual dried herbs, paprika, or garlic powder.
