INGREDIENTS:

  • 2 tbsp. olive oil
  • 1 & ½ lb. bulk spicy Italian sausage
  • 1 stalk celery, chopped
  • ¼ cup chopped onion
  • 2 pieces of grated garlic
  • 1 medium cut zucchini
  • 6 ounces trimmed & half green beans
  • 1 small chopped red pepper
  • 1 small diced tomato
  • 4 cups beef broth
  • 1 tbsp. tomato paste
  • 2 inch piece of Parmesan rind
  • Salt and pepper to taste

INGREDIENTS NOTES:

OLIVE OIL:

  • The veggie is sautéed in olive oil, but any neutral oil, such as avocado oil, would do.

ITALIAN SAUSAGE:

  • Choose high-quality sausage that is without added sugar and carbohydrates. If you like, you may use mild sausage.

ONIONS:

  • Only 1/4 cup of onions is used to give taste without consuming a lot of carbohydrates.

VEGETABLES:

  • The best thing about this soup is that you can use any low-carb vegetables you have left over.

BONE BROTH:

  • Beef bone broth is used to make this recipe; you may use chicken broth instead of the beef stock.

TOMATO PASTE:

  • To give the soup a deep color, add one tbsp. of tomato paste.

PARMESAN RINDS:

INSTRUCTIONS:

  1. Add the oil to a large soup pan or Dutch oven set over medium heat.
  2. After it’s heated, add the sausage and cook it till it gets beautifully browned, breaking up any clumps.
  3. Sauté the garlic, onions, and celery for three minutes or till the veggies start to get tender.
  4. When the veggies get tender than include the zucchini, tomatoes, green beans, & red pepper and cook them for four minutes more.
  5. Add the tomato paste and broth and stir.
  6. Add the rind of the Parmesan.
  7. Cook for fifteen minutes after bringing to a simmer.
  8. Remove the parmesan rind and add salt and pepper to taste.
  9. Top with grated Parmesan if preferred.
