INGREDIENTS:

  • 2 yolks of egg (large)
  • Unsalted butter, 1/3rd cup
  • Large eggs, 2
  • Three-fourth cups of any sweetener
  • Juice of 2 lemons (large)

INGREDIENT NOTES:

SWEETENER:
You may use any sweetener (keto) as per your choice. Here we have used allulose (granulated) in our recipe. You may try monk fruit as well.

EGGS & THEIR YOLKS:
Normal recipes only use egg yolks while making curd. It will get too dense & thick. So I used half the amount of egg yolks & replaced the other half with eggs. This is how I get my required consistency.

LEMON:
To have a fresh taste & strong fragrance always squeeze fresh lemons & use that juice.

BUTTER:
Remember to use butter without salt which must be at the surrounding temperature.

INSTRUCTIONS:

  1. Place a saucepan over the working counter.
  2. Include eggs & their yolks along with sweetener.
  3. Mix well to combine them.
  4. Then place that saucepan over the little flame.
  5. Now, immediately add butter & juice of lemon.
  6. Don’t let the mixture rest until it starts to thicken.
  7. Turn the flame off once it has thickened.
  8. Now place a strainer on a bowl.
  9. Pass the curd through that strainer.
  10. Wait for it to come to the surrounding temperature.
  11. Then transfer it to the glass jar with a resealable lid.
  12. Use the fridge to chill it before serving.

CREATIVE IDEAS:

LEMON ZEST:
Add the half of a tbsp. of lemon zest to have more stronger lemon flavor.

CHANGE THE CITRUS:
You may use the lime, orange, or grapefruit to change the flavor and enjoy the twist.

NON-DAIRY:
To have a non-dairy curd (lemon)
, use coconut oil in place of butter.

TIPS:

The main and important trick is always to avoid using bowls made of any metal. As the acid present in the juice of lemon reacts with that metal. This is also not good for our health & our drink or dish will have the taste of that metal.

Watch the curd with full focus. As it starts to move at low speed & leaves a trace of movement of our whisk. It’s appropriate to switch the heat off at that point.

Cook the mixture on low heat otherwise, you will get scrambled eggs.

Store the curd in a sealed jar & use the freezer to save it for about half a year.

FRIDGE:
