We have swapped the all-purpose flour with keto flour (almond + coconut). This will let us have the keto version of these muffins. It will be gluten-free too.

LEMONS:
The recipe calls for the mandatory presence of both juice & zest of lemons. Try to use the fresh juice and zest to have a fresh & strong flavor.

EGGS & BAKING POWDER:
Both of these items help to raise the muffins well.

KETO SWEETENER:
Use any granulated version of keto sweetener (your choice). It helps to sweeten our muffins while keeping the carbs low.

POPPY SEEDS:
We use poppy seeds to have a distinct look & crunch in our muffins.

SOUR CREAM:
It helps to create extra moisture and puffiness in our muffins. We can also use Greek yogurt if we can’t get the sour cream. Both of these items never let our muffins dry.

Salt & ESSENCE (VANILLA):
A small amount of both of these items helps to enhance & spike the muffin’s flavor.

BUTTER (MELTED):
Melted butter adds creamy richness to our muffins. Choose any vegetable oil that you would like to use.

INSTRUCTIONS:

PREPARATIONS:

  1. Switch the oven on & heat it empty at 350 F.
  2. Pick a muffin tin (with 12 cups) & place liners (paper) in each cup.

SOLID ITEMS:

  1. Place a normal-sized vessel on your working bench.
  2. Gather all the solid components as per the list.
  3. Include the flour (coconut & almond), poppy seeds, baking powder, & salt.
  4. Combine them very well using a whisk.

LIQUID ITEMS:

  1. Use another big vessel for mixing liquid components.
  2. Include cream cheese, butter, & oil of coconut in a bowl that is heat-safe.
  3. Warm them using a microwave for some seconds till all the items melt.
  4. Place the vessel back on the working table.
  5. Now, include eggs, keto sweetener, vanilla essence, sour cream, juice, & zest of lemons.
  6. Combine all the liquid items very well using the whisk.

The batter of Muffins:

  1. Now transfer the mix of solid ingredients into the liquid mix in batches.
  2. Fold in either a clockwise/anticlockwise direction.
  3. Then include another batch of dry items, mix, & fold as above.
  4. At last, you get the muffin batter (thick).
  5. Get your prepared muffin tin & fill the three-quarters of the cup.
  6. You will have 11/12 muffins if you fill this way.

BAKING:

  1. Insert them in the oven (already heated) & put a 21-minute timer on it.
  2. Once the timer stops, open the door of the oven.
  3. Slide the muffin tin out (warning: it’s hot).
  4. It’s time to check if muffins are ready or not.
  5. Pick any pointed stuff in the center.
  6. If the batter doesn’t stick to that tool, it means muffins are ready.
  7. Also, check by pressing the muffin; if it comes back, that’s perfect.

TIPS:

While whisking the solid items, break the clusters with focus.
Preserving a thick batter is ideal. Otherwise, poppy seeds will all go down and sit.
