This soup is made with tender beef tripe and collagen-rich beef foot, which is cooked in a robust red chili broth made with dried guajillo and ancho chilies. We are achieving the texture of hominy(high in carbs) by using other low-carb ingredients like cauliflower or zucchini. We can garnish this soup with cilantro, lime, and chopped onion to make it look vibrant and tastier. This Keto Mexican Menudo is seasoned with some spices like Mexican oregano and cumin. It provides a filling, classic experience by having the keto version of this Mexican menudo, whether it is consumed by itself or in combination with chicharrones or keto tortillas.

- 10 cups water
- 1 tbsp. Apple cider vinegar
- A cup of zucchini/cauliflower(chopped)
- 4 pieces garlic
- 1 small onion
- Two dried ancho chiles
- 1 tsp. oregano
- 1 tsp. cumin
- Salt
TO GARNISH:
- Chopped onion
- Fresh cilantro
- Lime wedges
- Dried oregano
- Diced radish
INGREDIENTS NOTES:
TRIPE:
- The classic option for menudo is tripe, ideally honeycomb tripe. The tripe must be thoroughly cleaned to get rid of any stench. We can also soak it for fifteen minutes or so in water with apple cider vinegar, then rinse it well.
SHANKS & BEEF FOOT:
- Shank and beef foot cuts are used to make a thick, collagen-rich broth. The soup gains depth and a viscous texture from the beef foot. We can also substitute the short ribs or beef shank with beef foot if it is not available.
ANCHO & GUAJILLO CHILIES:
- We can add the Ancho and guajillo chilies a little heat and a rich, smoky taste. We can also use the chili powder in place of dried chiles if the chilies are not available, but the flavor won’t be the same.
ZUCCHINI & CAULIFLOWER:
- You can substitute chopped zucchini or cauliflower to achieve a comparable texture without adding carbohydrates like hominy. This maintains the soup’s ketogenic status while emulating the texture of classic menudo.
APPLE CIDER VINEGAR:
- Apple cider vinegar balances the rich soup and aids in cleaning the tripe and it is completely optional.
