INGREDIENT NOTES:
SPICES:
We are using the powder of cinnamon, ginger, nutmeg, & allspice here. These spices give the traditional & classic taste to your muffins. If you don’t have any one/two spices available, then you may omit them.
EGGS:
Eggs provide proteins, calcium, & fats to our muffins. Their function is to help the muffins rise & become spongy.
SWEETENER:
In case you are on the paleo diet, then use either coconut sugar/maple syrup. If you are on keto, then use any granulated keto sweetener of your choice. The sweetener also provides the right moisture & texture to the muffins.
PROTEIN POWDER:
We include the protein powder to increase the protein in the muffins. The protein powder that I used in this recipe is ketogenic, paleo, & vegetarian. It comprises only three seeds: pumpkin seeds, sacha inchi, & hemp seeds.
If you don’t find this, then process the pumpkin seeds in your processor to make their powder.
OIL:
You need some of the oil to lock the moisture inside the muffins. You may use any of the neutral-flavored oils, like avocado or coconut and you can also have the choice to go for the melted butter.
FLOUR:
Here we are using the flour coconut that requires more eggs than almond flour. This is how you get more nutrition through eggs.
MIX-INS:
You can include pecans/walnuts, shredded coconut, raisins, or chocolate chips. You may include all or omit any half of them depending on your preference.
VEGGIES (GRATED):
We have used grated zucchini & carrot as a classical touch to our muffins. The 0.5 cup of carrot that we have used only adds a single gram of net carb. Still, if you want to skip the carrot, then use extra zucchini in place of it.

INSTRUCTIONS:
- Heat the empty oven to 325 F.
- Pick a muffin tray with 6 cups.
- Place the silicone/paper liners in each muffin cap.
- Get a big mixing container & have it at the counter with all the other items.
- Include all the solid items that we have mentioned above.
- Whisk to combine them well.
- In another big vessel, include all the liquid items & mix them also in the proper way.
- Now include the mix of solid items in the container of liquid items.
- Do that in portions & then fold in a gentle way using a spatula.
- Repeat the similar process till the batter formed is smooth & free from lumps.
- Place the prepared muffin pan near you & fill the cups 3/4th with the batter.
- Shift the muffin tray in the oven (heated).
- Close the door & let the muffin rise & cook.
- When you observe that they have risen completely, check if the center is wet or not.

The carrots constitute only a small amount of carbs. Still, if you want to be particular about the carbs, then replace the carrots with zucchini.
