Keto Samoa Cookie Bars are made with almond flour shortbread and have coconut caramel and chocolate over them. They are so easy to make and it just requires a total of 45 minutes to make and bake them. Original Samoa is a shortbread that is cut into circles and is topped with coconut and caramel and the bottom is dipped with chocolate that’s a lot of work but these cookie bars have the shortcut with all those ingredients but are ready in half time.

INGREDIENT:

Crust:

  • 1 ¼ cup almond flour (125g)
  • ¼ cup swerve sweetener
  • ¼ teaspoon salt
  • ¼ cup butter (melted)

Chocolate filling and drizzle:

  • 4 ounces (sugar-free) dark chocolate (chopped)
  • 2 tablespoons coconut oil or butter

Coconut caramel filling:

  • 1 ½ cups shredded coconut
  • 3 tablespoon butter
  • ¼ cup swerve brown
  • ¼ cup Bocha Sweet (or additional Swerve Brown)
  • ¾ cup heavy whipping cream
  • ½ teaspoon extract of vanilla
  • ¼ teaspoon salt

INSTRUCTION:

Crust:

  1. Put your oven to heat at three twenty-five.
  2. Take a bowl (medium) and add the 1 ¼ cup almond flour, ¼ scup swerve sweetener, ¼ teaspoon salt and mix all the ingredients with a whisk.
  3. Pour the butter (melted) to the mixture (dry) and mix it softly.
  4. Add the flour of almond and butter mix to the pan (baking) and press it with a rubber spatula.
  5. Bake it for several minutes (15-18).
  6. Take the cookie bar from the oven and allow it to cool down.

Chocolate filling/drizzle:

  1. Take a bowl (small and microwave-safe)
  2. Add the chocolate and coconut oil to the bowl and place it in the microwave.
  3. Melt in intervals of 30 sec and stir the chocolate in between.
  4. Other way to liquefy the chocolate is by placing of heat-safe bowl to simmering water (double-boil method).
  5. You can place heat heat-safe bowl over simmering water add chocolate and coconut oil in the bowl and mix it to melt the chocolate.
  6. Pour 2/3 of the chocolate into the almond flour crust and spread it evenly.

Coconut filling:

  1. Take a skillet (medium) and put it on heat (medium).
  2. Add 1 ½ cups of coconut flakes and toss it till it gets a nice brown color. Put it aside.
  3. Take a saucepan (large) and add the 3 tablespoons of butter and ¼ cup of butter.
  4. Melt the butter and cook it until the appearence of coconut flakes turn into nice brown color.
  5. Put it on the shelf and add the ¾ cup of heavy whipping cream, ½ teaspoon of extract of vanilla, and ¼ teaspoon salt and mix it.
  6. Transfer the toasted coconut to the mixture and mix it properly.
  7. Add this coconut mixture to the crust of flour of almond and spread it evenly.
  8. Put the cookie bars in the refrigerator to chill for a few hours (1-2).
  9. After few hours (1 Or 2) put it out and slice its squares with the knife.
  10. Mildly heat the chocolate glaze drizzle it above the cookie bar and serve it.

TIPS:

  • Melt the caramel on low flame.
  • Please do not get your eyes off the caramel on the stove, and be prepared.
  • Remove the pan from the stove when it is turning to a nice brown color otherwise, it gets burned easily.
  • You can use flour (sunflower seed) instead of flour of almond to get nut-free cookies.
  • To make a thinner and smoother drizzle of chocolate use a small amount of coconut oil (½ to 1 tsp.) for ½ cup of chocolate chips.
